The new name doesn't change the fact this eatery has been a locally owned family business for over 50 years. Many favorite dishes come straight from owner Agustin Alvarez's family recipes. One very popular dish, Pedro's Quesadilla, comes from a recipe originating in Guadalajara, the capital and largest city of the Mexican state of Jalisco. No matter the recipe, the chefs work hard to differentiate their cuisine from the crowd by buying only the freshest ingredients and staying true to traditional methods of preparation. The menu is almost as appealing as the food itself, featuring easy-to-read, clear descriptions of the vast array of options and multiple large, high-quality photos of the food on every page. This demonstrates the restaurant's consideration for both those familiar with Mexican cuisine and those who have only tried tacos — customers can in many cases see exactly what they'll be ordering.
