| SUPER BOWL SUNDAY | 42 SUNDAY, FEBRUARY 7, 2016 By Esther Kennedy estherthezester@gmail.com @EsthertheZester on Twitter I am a diehard Green Bay Pack- ers fan — proud to be one for more than 20 years. So you can understand my sadness after the divisional round against the Cardinals in January. I mean ... What. A. Game. Needless to say, I'm very heartbroken that my boys won't be in this year's big game. With that being said, just like my boys, I'll be watching the Super Bowl at home. Yes, it's going to be here in my home state, but I learned many years ago to stay far away from where the Super Bowl is be- ing held. That's why I keep the party at home. While I'm not hosting a get-together this year, I suspect many of you might be — and if you waited 'til the last moment (or if a certain someone just told you their friends are coming over and you need to whip up a few things), I have the perfect solution. We all love snacks — especially during football games. What's better than quick bites with a beer to go with the game? I created a few appetizer recipes that are quick, easy and more importantly, yummy! The best part is that none of them take more than about 30 minutes to create, start to finish. Whoever you're rooting for during the big game, make sure you have a snack in one hand and a foam finger in the other. Deviled footballs Total time: 25 minutes Serves: Serves 4-6 INGREDIENTS For eggs 6 large eggs 1 tablespoon white vinegar 1/3 cup mayonnaise 2 1/4 teaspoons sweet relish 1 1/2 teaspoons black olives, finely chopped 1 teaspoon apple cider vinegar 3/4 teaspoon fresh dill, finely chopped 1/2 teaspoon paprika 1/2 teaspoon ground mustard 1/8 teaspoon salt 1/8 teaspoon pepper For dyeing and decor Green onions 1 cup water 10 drops food coloring (your favorite team's colors) DIRECTIONS To hard-boil eggs: Place eggs in a medium- sized saucepan and fill with cold water an inch above the eggs. Add white vinegar. Heat on high until boiling; lower heat and boil for 1 minute, covered. Remove from heat. Let stand, covered, for 13 minutes. Run eggs under cold water for 1-2 minutes, gently peel, then rinse and pat dry. Cut eggs lengthwise and place yolk in a bowl. To dye egg whites in your team's colors: Take a small glass bowl and combine water and dye; stir. Place egg whites in dye mixture for 3-5 minutes. With a spoon, gently take out the eggs and place on a plate lined with paper towels; pat dry. Set aside. To make filling: Gently smash yolks then add remaining ingredients and blend until creamy. Refrigerate for 5 minutes. Take a sandwich bag, cut the tip off and spoon in mixture. Pipe egg mixture into the dyed egg halves in form of footballs. For seams and stitches: Cut green onions in quarters, long-ways. Recommended length for seams is 1 1/2 inches; stitches are 1/4-inch long. Tip: tweezers help in placing seams and stitches. For presentation, place eggs on a bed of chopped lettuce. SUPER FOOD Don't stress if you just found out you are hosting a Super Bowl get-together RECIPES
