The effect was that railroad develop- ment, which accelerated in the North, stagnated in the South. And so it was that not until after the Civil War that from Los Angeles, the Southern Pacifi c Railroad reached • About 4-5 apples, peeled and chopped Stove top Apple Pie INGREDIENTS • 1 pie crust - pre-made (graham cracker or vanilla wafer) • butter to coat apples • 1/2 tsp cinnamon • sugar - to taste plus a tiny bit for sweetness • Crushed vanilla wafers OR graham crackers (for topping) HOW TO MAKE IT Place your butter in a frying pan over medium heat and allow to melt. Put apples in pan. Add sugar, a little water and cinnamon. Stir occasionally. After a few minutes the apples should start reducing and releasing juice. Continue to stir until the liquid starts to caramelize (light brown in color). If you think your fi lling is too runny mix a bit of cornstarch in a little bit of water then mix into the pan. If you don't have cornstarch, try fl our. This will thicken up the mixture. Start scooping your fi lling into pre- made crust and be sure to pack it in well. Top with the crushed graham cracker (or other cookie) and gently tap with the bottom end of a spoon. You can refrigerate for 30 minutes to an hour before serving, if you want. Serve with ice cream. Gadsden Purchase Marker on I-10 PHOTO LEFT: James Gadsden, Ambassador to Mexico Yuma in 1877. In 1880 it arrived in Tucson and in 1881 south of El Paso at Sierra Blanca, Texas it connected with the Texas Pacifi c Railway, thus completing the long-planned southern transcontinental railroad. Two years later the Santa Fe Rail- road Company completed the second southern transcontinental railroad across northern Arizona, via Flagstaff, Prescott, and Kingman. Oh, and there's another thing that crosses my mind as I travel south on U.S. Highway 95 and drive over the Gila River; without the Gadsden Pur- chase of 1853 Yuma would be in the Mexican state of Sonora, as would Gila Bend, much of South Phoenix, Casa Grande, and Tucson plus several cities in southwestern New Mexico. | S BC Harold "Herk" Knoll turns 98!
