If asked to, I make up any possible excuse as to why I couldn't possibly take the time to make one the right way. I beg, instead, to be al - lowed to bring a dessert, or two, or even three. Just please, please don't ask me to make lasagna. Growing up, my fam - ily only had lasagna once a year at Easter. It was defi- nitely not some run-of-the- mill casserole. Oh no. My Nonna would simmer a red sauce all day, make the noo - dles by hand, and, because ricotta cheese was un- heard of in our small town of Gridley, drive to Chico to find it and the imported Parmegiano-Reggiano cheese that she loved. By the time she finished making the lasagna, she was two days into a project that would be eaten in an hour. However — and it's a big however — my problem with making lasagna is not the time consumption. It's the fact that I have never been able to duplicate Non - na's "I-keep-it-all-in-my- head-you-just-have-to-feel- it" recipe, and that drives me crazy. A spry 87, Nonna no lon - ger makes lasagnas, but the Easter lasagna tra- dition still holds as my mother now makes them. A few years ago, she decided to mix it up and try some - thing new. She tried a rec- ipe from Bon Appetit maga- zine that became an instant classic. Made with fresh aspar- agus, whipped cream and lemon zest, the flavor is at once bright yet rich and creamy. The layers of pasta are velvety smooth and ten - der and just one bite has you rolling your eyes back in your head and moaning — it's that good. Most likely this lasagna will be on our Easter table this year. If you're like me and have sworn off making it, simply pass the recipe on to the first unsuspecting relative who asks, "What can I bring?" That way, you can have your lasagna and eat it, too. Asparagus Lasagna Serves 6 main dish servings or 10-12 side dish servings. From a recipe adapted from Bon Appetit magazine. Check out the link below to make the noodles yourself. I highly recommend it, aer all, you only need about 10 noodles. Ingredients 2 tablespoons (1/4 sticks) butter 1 medium onion, finely chopped 2 garlic cloves, minced 3 tablespoons all purpose flour 2 cups whole milk One half teaspoon grated lemon peel One quarter teaspoon ground nutmeg Three quarters pound as- paragus One and one half cups ricotta cheese 6 to 9 lasagna noodles One and one third cups shredded Gruyere cheese (about 5 ounces) One half cup heavy whipping cream, whipped, and salted with one half teaspoon kosher salt Freshly grated Parmesan cheese Preparation Melt butter in heavy medium saucepan over medium-low heat. Add onion and garlic and sauté onion until translucent, about 8 minutes. Add flour and cook 2 minutes, stirring occa- sionally. Gradually whisk in milk. Simmer until mixture thickens, stirring constantly, about 2 minutes. Mix in lemon peel and nutmeg. Remove from heat. Season with salt and pepper. (Can be prepared 1 day ahead. Cover white sauce and refrigerate.) Grease 8-inch square baking pan. Steam asparagus over boiling salted water until just crisp-tender, about 6 minutes. Refresh under cold water; drain. Cut asparagus into 1-inch-pieces. Combine asparagus and ricotta in small bowl. Cook lasagna noodles in large pot of rap- idly boiling salted water un- til just tender but still firm to bite, stirring occasionally. Drain. Rinse noodles with cold water and drain well. Spread 1/2 of white sauce in bottom of pan. Top with single layer of lasagna noodles, trimming to fit. Cover with 1/2 cup white sauce. Top with 1/2 of asparagus mixture. Top with half of Gruyere cheese and parmesan. Top with another layer of noodles. Cover with remaining white sauce. Top with remaining aspara- gus mixture, Gruyere and Parmesan cheeses. Cover with remaining noodles. Top last layer with salted whipped cream and sprinkle with Parmesan cheese. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing.) Preheat oven to 350°F. Bake lasagna until heated through, about 20 minutes.
