try these recipes Hook, line and freezer Quick seafood recipes to cook from frozen Maple Mustard Salmon Ingredients • 2 ½ tablespoons stone-ground mustard • 1 tablespoon maple syrup • 1 teaspoon fresh lemon juice • ½ teaspoon minced garlic • ¼ teaspoon minced fresh thyme • 6 (6 ounce) frozen salmon fillets, thawed and patted dry • 1 teaspoon kosher salt • ½ teaspoon black pepper • 1 tablespoon olive oil Directions 1. Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with foil. 2. Whisk together mustard, maple syrup, lemon juice, garlic, and thyme in a small bowl. 3. Season salmon on both sides with salt and pepper and brush with oil. Arrange salmon on prepared baking sheet. Brush with mustard mixture. 4. Bake in the preheated oven until salmon flakes easily with a fork, 8 to 10 minutes. Cook's Note: If your salmon has skin, arrange skin sides down on the baking sheet. Creamy Bay Scallop Spaghetti Ingredients • 8 ounces uncooked thick spaghetti • 1 tablespoon vegetable oil • 1 pound bay scallops • 2 tablespoons butter • 3 cloves garlic, minced • 2 teaspoons grated lemon zest • 1 pinch red pepper flakes • 1/3 cup dry sherry • 1 cup heavy cream • salt and pepper to taste • 1 lemon, juiced • 2 tablespoons chopped Italian parsley, divided • Freshly grated Parmigiano-Reggiano cheese, for serving Directions 1. Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until tender yet firm to the bite, about 10 minutes or 1 minute less than directed on the package. 2. Meanwhile, heat oil in a large skillet over high heat. When oil just starts to smoke, add scallops and move them into a single layer. Let sear on high for about 1 minute. Toss to turn. 3. Add butter and stir scallops until butter melts. Stir in garlic. 4. Add lemon zest and red pepper flakes. Stir in sherry and cook and stir until alcohol cooks off, about 1 minute. 5. Pour in cream. When mixture begins to simmer, reduce heat to medium-low. Add salt, pepper, and lemon juice. 6. Drain pasta. Transfer to skillet with scallops; bring to a simmer. Add 1/2 of the chopped parsley. Cook until pasta is heated through and tender, about 1 minute. 7. Remove from heat. Garnish generously with grated cheese. Add the rest of the parsley. Serve in warm bowls. Air Fryer Coconut Shrimp Ingredients • ½ cup all-purpose flour • 1 ½ teaspoons ground black pepper • 2 large eggs • 2/3 cup unsweetened flaked coconut • 1/3 cup panko bread crumbs • 12 ounces uncooked medium shrimp, peeled and deveined • cooking spray • ½ teaspoon kosher salt, divided • ¼ cup honey • ¼ cup lime juice • 1 serrano chile, thinly sliced • 2 teaspoons chopped fresh cilantro Directions 1. Stir together flour and pepper in a shallow dish. Lightly beat eggs in a second shallow dish. Stir together coconut and panko in a third shallow dish. 2. Working one at a time, dredge shrimp in flour mixture; shake off excess. Dip floured shrimp in egg; allow any excess to drip off. Finally, dredge in coconut mixture, pressing to adhere. Place shrimp on a plate. Coat shrimp well with cooking spray. 3. Preheat the air fryer to 400 degrees F (200 degrees C). Place 1/2 of the shrimp in the air fryer and cook about 3 minutes. Turn shrimp over and continue cooking until golden, about 3 minutes more. Season with 1/4 teaspoon salt. Repeat with remaining shrimp. 4. Meanwhile, whisk together honey, lime juice, and serrano chile in a small bowl. 5. Sprinkle fried shrimp with cilantro and serve with honey- lime dip. Cook's Note: Keep cooked batches in a warm oven (175° to 200°F) until ready to serve. No air fryer? No problem!
