march 12-18, 2023 What's up! 47 try these recipes Air Fryer Dinners Whip up an impressive, delicious meal in no time Air Fryer Tacos de Papa Ingredients • 2 cups water • 1 (4 ounce) package instant mashed potatoes or leftover homemade mashed potatoes • ½ cup shredded Cheddar cheese • 1 green onion, chopped • ½ teaspoon ground cumin • 10 corn tortillas • 1 serving nonstick cooking spray • ½ cup salsa verde • ¼ cup crumbled cotija cheese Directions 1. Heat water in a medium saucepan to boiling. Remove from the heat and stir in instant mashed potatoes. Mix thoroughly with a fork to moisten all potatoes and let stand 5 minutes. Stir in Cheddar cheese, green onion, and cumin. 2. Preheat an air fryer to 400 degrees F (200 degrees C). 3. Wrap tortillas in a damp paper towel and microwave on high until warm, about 20 seconds. 4. Spread 1 tablespoon potato mixture in the center of a tortilla and fold over to make a taco. Repeat with remaining tortillas. 5. Working in batches, place tacos in the basket of an air fryer. Spray the tops with cooking spray and cook until crispy, about 5 minutes. Transfer to a serving platter and repeat to cook remaining tacos. 6. Drizzle salsa verde over tacos and top with cotija cheese. Panko-Crusted Air Fryer Mahi Mahi Ingredients • 4 (4 ounce) mahi mahi fillets • 2 tablespoons grapeseed oil • 2 cups panko bread crumbs • 1 teaspoon everything bagel seasoning • ½ teaspoon garlic salt • ½ teaspoon ground turmeric • ½ teaspoon ground black pepper • nonstick cooking spray • 1 teaspoon chopped fresh parsley • 1 medium lemon, cut into 4 wedges Directions 1. Preheat an air fryer to 400 degrees F (200 degrees C) for 5 minutes. 2. Meanwhile, place mahi mahi fillets on a platter and drizzle with grapeseed oil. 3. Mix panko, bagel seasoning, garlic salt, turmeric, and pepper together in a shallow dish. Dip each fillet into the panko mixture to coat, then place in a single layer in the air fryer basket. Spray with nonstick spray. 4. Cook in the preheated air fryer until fish flakes easily with a fork, 12 to 15 minutes, flipping halfway through. 5. Remove from the air fryer. Garnish with parsley and lemon wedges. Serve immediately. Breaded Air Fryer Pork Chops Ingredients • 4 (5 ounce) boneless, center-cut pork chops, 1-inch thick • 1 teaspoon Cajun seasoning • 1 ½ cups cheese and garlic croutons • 2 large eggs • cooking spray Directions 1. Preheat an air fryer to 400 degrees F (200 degrees C). 2. Place pork chops on a plate and season both sides with Cajun seasoning. 3. Pulse croutons in a small food processor until fine; transfer to a shallow dish. Lightly beat eggs in a separate shallow dish. Working one at a time, dip pork chops into beaten egg, letting excess drip off; press into crouton breading to coat both sides and place breaded chop, unstacked, onto a plate. Repeat with remaining chops. Mist chops with cooking spray. 4. Spray the air fryer basket with cooking spray and arrange chops in a single layer in the air fryer basket. You may have to do two batches depending on the size of your air fryer. 5. Cook in the preheated air fryer for 5 minutes; flip chops and mist again with cooking spray if there are dry areas. Cook 5 minutes more. An instant-read thermometer inserted into the center of the chops should read 145 degrees F (63 degrees C). Tips Play around with different crouton flavors for variety. Keep chops warm in an oven on the lowest setting while air frying remaining chops. For thicker chops, add an extra minute to the cook time. For thinner chops, cook 1 minute less.
