Add onion & cook until soft, 6 minutes. Add garlic, red pepper flakes, & tomato paste & cook until garlic is fragrant & tomato paste has darkened, 2 to 3 minutes more. Add thyme & tomatoes, including juice. Add water or vegetable stock & bring to simmer. Cook 10 minutes. Blend with immersion blender or transfer to a blender in batches & blend until smooth. Ladle into bowls & serve with a drizzle of olive oil & fresh thyme leaves. Easy Crock-Pot Chicken & Dumplings 1 onion, chopped 1 1/4 lb. boneless skinless chicken breasts 1 tsp. dried oregano Kosher salt Freshly ground black pepper 2 (10.5-oz.) cans cream of chicken soup 2 c. low-sodium chicken broth 4 sprigs fresh thyme 1 bay leaf 2 stalks celery, chopped 2 large carrots, peeled and chopped 1 c. frozen peas, thawed 3 cloves garlic, minced 1 (16.3-oz.) can refrigerated biscuits Scatter onion in bottom of a large slow cooker then top with chicken. Season with oregano, salt, & pepper. Pour over soup & broth then add thyme & bay leaf. Cover & cook on high until the chicken is cooked through, about 3 hours. Discard thyme & bay leaf, then shred chicken with two forks. Stir in celery, carrots, peas, & garlic. Cut biscuits into small pieces, then stir into chicken mixture. Spoon liquid over any biscuits at the top. Cook on high until vegetables are tender & biscuits are cooked through, about 1 hour more. Classic French Onion Soup 4 tbsp. butter 3 large white onions, thinly sliced into half moons 2 tbsp. all-purpose flour Kosher salt Freshly ground black pepper 1/2 c. white wine 2 c. low-sodium chicken stock 4 c. low-sodium beef stock 8 sprigs fresh thyme, plus more for garnish 8 baguette slices 1 c. grated Gruyère In a large pot over medium-high heat, melt butter. Add onions & cook, stirring occasionally, until deeply golden, 25 minutes. Add flour & cook 1 minute until no longer raw. Season with salt & pepper. Add white wine & let simmer until evaporated, 3 minutes. Add chicken & beef stocks & thyme. Bring to boil. Reduce heat to medium. Simmer 15 minutes. Season with salt & pepper. Remove thyme. Preheat broiler to high. Place 2 baguette slices on a large baking sheet & top each with 2 tablespoons cheese. Place under broiler until cheese is bubbling & golden brown, 1 minute. Serve soup in bowls or large mugs with baguette slice on top. Garnish with a thyme spring. Chicken & Rice Soup 3 tbsp. butter 1 onion, chopped 2 large carrots, sliced into rounds 2 stalks celery, thinly sliced 1 lb. boneless skinless chicken breasts 1 tbsp. fresh thyme leaves, plus more for garnish 3 cloves garlic, minced kosher salt Freshly ground black pepper 3 tbsp. all-purpose flour 4 c. low-sodium chicken broth 1 c. heavy cream 1 c. wild rice In a large pot or Dutch oven, melt butter. Add onion, carrots, & celery. Cook, stirring, until vegetables are tender & liquid has evaporated, 6 minutes. Add chicken & cook until golden, 10 minutes. Add thyme & garlic & stir until fragrant, 1 minute. Season generously with salt & pepper. Add flour & whisk until golden, 1 minute. Pour over chicken broth & milk & season with salt & pepper. Add rice & bring to a simmer until rice is tender & chicken is cooked through. The place seems like a dream come true: the right space, the right location, the right price. But is it really for rent? Or will the renter or traveler arrive to fi nd their money gone with nowhere to stay? An in-depth investigative study by Better Business Bureau (BBB) fi nds that fraud is widespread in the on- line rental home and vacation rental market, with 43% of online shoppers encountering a fake listing and more than 5 million consumers losing mon- ey to such scams. The investigative study - Is That Rental Listing Real? A BBB Study of Rental Scams Involving Apartments, Houses and Vacation Properties - notes that 85% of consumers encountering fake rental listings do not fall for them. However, these fi gures suggest that the volume of rental scams lurking on the internet is staggering. According to the study, rental scams can take several forms, but perhaps most commonly, fraudsters simply copy the photo and description of a property, post it online with their own contact information and try to get a deposit and fi rst month's rent from the victim. The fraudster may commu- nicate only by email or text message and may claim to be out of the coun- try and unavailable to show the prop- erty. Once the victim sends money, the fraudster disappears. In less common types of fraud, vic- tims may be enticed to buy an online directory of homes supposedly for rent, or they may be tricked into sign- ing up for credit monitoring that comes with recurring monthly charges. "While an advertised rental that meets your needs at a great price might be tempting, it just may be a scam," says Tom Bartholomy, presi- dent and CEO of the BBB. "Consum- ers shouldn't rush into paying upfront fees for renting housing sight-unseen. Instead, take time to verify the details of a listing." BBB Scam Tracker has received more than 1,300 reports of rental fraud from 2016 to 2019, while the FBI's Internet Crime Complaint Cen- ter (IC3) reports more than $37 mil- lion from Jan. 1, 2019-Oct. 20, 2019, in losses associated with complaints that mention the word "rent." Many consumers look for rental listings on free classifi ed listing sites like Craigslist in the U.S. and Kijiji in Canada, as well as Facebook Market- place. They also check websites such as Apartments.com, Zillow, Trulia, Re- altor.com and Homes.com. Fake list- ings turn up frequently on these sites, despite the companies' efforts to keep scam listings off their sites and warn consumers about potential fraud. The study fi nds that while the most fraud reports come from the largest met- ropolitan areas, no geographic area in North America appears to be safe from it. One Charlotte woman reported to BBB Scam Tracker that fraudsters were trying to rent her a home they didn't own. Scams also frequently appear on vacation rental websites such as Airbnb, VRBO and HomeAway.com. They follow the same pattern, prey- ing on vacationers' inability to check out a listing before paying money for it. Cases also have been noted of scam- mers luring a renter away from Airbnb to deal with the "landlord" directly or spoofi ng Airbnb's site to imperson- ate the landlord and the company's payment portal. These companies likewise have warned consumers about potential fraud and taken steps against fake listings. Rental fraud is often committed by Nigerian criminal gangs that partici- pate in other types of fraud. Law en- forcement efforts have targeted per- petrators of a variety of rental fraud. The Federal Trade Commission (FTC) took action against a company that fraudulently sold credit monitoring that allegedly was required before a con- sumer could tour a rental property, while another company selling a fake directory of "pre-foreclosure" homes was successfully prosecuted in fed- eral court. In addition to warning consumers of red fl ags that may signal apartment or vacation rental scams, the report rec- ommends: • Rental unit owners should watermark photos used for rental postings, which will make it more diffi cult for scammers to copy photos of other properties posted online. • Website platforms that list houses, apartments and vacation properties should make extra effort to screen for bogus listings, and they should explore ways to allow consumers to easily report scam listings. • Police should encourage victims to report not only to the rental platform, but also to the FTC, BBB, and IC3. What to do if you are the victim of a rental scam: • File a report with local police. • Go to BBB.org to view a business' BBB Business Profi le, including complaints & reviews, or to fi le a complaint or report a scam on Scam Tracker. • Contact the Federal Trade Commission at ftc.gov/complaint or by calling 877-FTC-HELP. • File a complaint with the Internet Crime Complaint Center.
