June 26-July 2, 2022 What's up! 47 try these recipes Summer pasta dinners Simple, satisfying, few-ingredient pasta dishes; plus garlic bread without the oven Stanley Tucci's Tomato & Basil Pasta Recipe Ingredients • 3-4 plum or roma tomatoes, quartered • 2 tablespoons extra virgin olive oil • 2 cloves garlic, finely diced • ¼ cup fresh basil leaves, torn • 8 ounces dried pasta • Salt to taste • 2 oz of crumbled goat cheese or ricotta cheese, optional • Lemon zest, optional Directions 1. Combine tomatoes, oil, garlic, and basil in a medium bowl and marinate in the fridge for at least 20 minutes. 2. Cook pasta according to package directions. Drain. 3. Salt the marinated tomatoes to taste, then toss with the cooked pasta. 4. Serve topped with cheese and lemon zest, if desired. Summer Pasta D'lite Ingredients • 6 large black olives, chopped • 3 tomatoes, chopped • 1 (5 ounce) can tuna, drained • ½ cucumber, chopped • 1 small onion, chopped • 2 cloves garlic, minced • 2 tablespoons olive oil • salt and pepper to taste • 4 ounces angel hair pasta Directions 1. In medium bowl, combine olives, tomatoes, tuna, cucumber, onion, garlic, olive oil, salt and pepper. Stir well and chill in refrigerator for 2 hours. 2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water until cool. Toss with tomato mixture, and serve. Unbelievable Grilled Garlic Bread Ingredients • 1 cup mayonnaise • 6 cloves garlic, peeled and minced • ¾ cup grated Parmesan cheese • ½ cup shredded Cheddar cheese • 1 tablespoon half-and-half • ¼ teaspoon paprika • 1 (1 pound) loaf French bread, halved lengthwise Directions 1. Preheat grill for medium heat. 2. In a medium bowl, mix the mayonnaise, garlic, and Parmesan cheese. In a saucepan over medium-low heat, mix the Cheddar cheese, half-and-half, and paprika. Stir constantly until melted and smooth. Pour into the bowl with mayonnaise mixture, stirring until well blended. 3. Place the French bread on the grill cut side down, and let it toast for a few minutes. Remove from the grill, and spread the cheese mixture on each side. Place the halves back together, and wrap the loaf in aluminum foil. Return to the grill for about 15 minutes, turning occasionally, until the loaf is heated through and the cheese mixture is hot.
