Fun food creations for family and guests Easy Frozen Hot Chocolate Bombs Ingredients • 2 ½ cups semisweet chocolate chips • 1 cup heavy whipping cream • 1 tablespoon white sugar • 1 teaspoon vanilla extract • ¼ teaspoon salt • 2 tablespoons cocoa powder, or as needed Directions 1. Combine chocolate chips, cream, and sugar in a microwave-safe dish and microwave for 1 minute. Stir and continue to microwave at 30-second intervals until chocolate chips have melted. Mix in vanilla extract and salt. Stir until well incorporated. Cover bowl and refrigerate for a minimum of 2 hours. 2. Scoop balls onto a parchment-lined baking sheet using a large cookie scoop. Freeze until solid, 8 hours to overnight. 3. Shape frozen scoops into balls and roll in cocoa powder. Store in a freezer-safe container until ready to use. Cook's Note: An easier way to roll the chocolate is wearing disposable gloves lightly sprinkled with cocoa powder. Bacon, Egg, and Cheese Breakfast Bombs Ingredients • 3 slices bacon, cut into 1/2-inch pieces • 2 tablespoons butter, divided • 4 eggs, whisked • salt and ground black pepper to taste • 1 (17.5 ounce) can refrigerated cinnamon roll dough with icing • 1 ¼ cups shredded Cheddar cheese • 5 tablespoons cream cheese, softened Directions 1. Place bacon in a large skillet and cook over medium- high heat, turning occasionally, until evenly browned, 5 to 8 minutes. Drain bacon slices on paper towels. 2. Preheat oven to 400 degrees F. Grease a 9-inch pie plate. 3. Melt 1 tablespoon butter in a nonstick skillet over medium-low heat. Pour in eggs; cook, stirring often with a spatula, until soft and fluffy, 3 to 5 minutes. Transfer to a plate to cool. Season with salt and pepper. 4. Remove cinnamon rolls from the packaging. Stand each roll on its side and press down into a rectangle, trapping the cinnamon sugar layers. Roll each rectangle into a thin 6-inch circle. 5. Spread 1 tablespoon cream cheese over each circle of dough. Layer 1/4 cup scrambled egg, 1/4 cup Cheddar cheese, and 1 tablespoon bacon pieces on top. Bring dough up and over the filling, pinching edges together to enclose filling completely. 6. Place rolls seam-side down in the prepared pie plate. 7. Heat remaining 1 tablespoon butter in a small microwave-safe bowl until melted, about 10 seconds. Brush over rolls. Season with salt and pepper. 8. Bake in the preheated oven, rotating halfway, until rolls are a deep golden brown, 20 to 22 minutes. Transfer pie plate to a wire rack; let rolls cool for 15 minutes before serving. Chicken Bombs Ingredients • 1 (8 ounce) package cream cheese, softened • ¼ cup finely chopped green onion, or to taste • 1 jalapeno pepper, finely chopped • salt and ground black pepper to taste • 8 chicken tenders • 8 slices bacon • 8 toothpicks • 6 tablespoons pepper jelly Directions 1. Preheat oven to 400 degrees F. Set a wire rack on top of a baking sheet. 2. Mix cream cheese, green onion, jalapeno pepper, salt, and pepper together in a bowl. 3. Pound chicken tenders into a rectangular shape with the flat side of a meat tenderizer. Place 3 tablespoons of the cream cheese mixture in the middle of each tender; fold into a pouch. 4. Wrap a slice of bacon around each pouch and secure with a toothpick. Top with some pepper jelly. Arrange on the wire rack. 5. Bake in the preheated oven until bacon is crisp and chicken juices run clear, about 35 minutes.
