Before I talk about the upcoming events I would like to apologize for an error I made in last week’s column. Cottonwood graduate Oregon State University had 4,496 people recog- nized as graduates in its commencement ceremony today. Cottonwood’s Michelle L. Bennett, Bachelor of Science, Cum Laude, General Science. SECRET WITNESS 529-1268 A program of Tehama County Neighborhood Watch Program, Inc. Setting it straight –––––––– It is the policy of the Daily News to correct as quickly as possible all errors in fact that have been published in the newspaper. If you feel a factual error has been made in a news story, call the news department at 527-2153. Being a long time reader of poetry I can generally remember the name of the poet however hav- ing typed last week’s column into the wee hours of the night I made an error. The excerpt of a poem at the end of my column cited Joyce Kilmer as the author…whoops, it was really, ee cummings. And to be sure read- ers don’t catch me in a further error, I must state that "ee cummings," is in lower case because the author chose to sign all writings in that manner. By the way, pulling out a few of each author’s poems and reading them could be an interest- ing event so check them out. Having corrected my error, I feel free to talk about some Tehama County activities that are coming to Red Bluff in the near future. On Saturday, June 12, Veterans Appreciation Day and Walk of Gratitude will be at Washington at Oak streets in downtown Red Bluff. A pancake breakfast will be avail- able at 7:30 a.m. with Speakers and dignitaries at 8 a.m. The walk of Gratitude begins at 9:30 a.m. More information can be obtained by calling 527-5180. Those of us who have had relatives who enlisted to serve our country are indeed appreciative of honoring them. A new addition to Tehama Coun- ty will occur on the fol- lowing dates, Friday, June 18, through Sunday, June 20, at the Tehama County Fairgrounds. "Crawdad Festival" will give county residents and beyond to participate in a festival new to Red Bluff. The Festival will open on Friday at 5 p.m., Sat. the festival gates will open at 9 a.m. as will Sunday gates open at 9 a.m. Crawdad Gumbo 1 pound crawdads, cooked and cleaned 8 – ounces smoked sausage 1/2 – pound fresh (pre- ferred) or frozen okra 1- medium brown onion Carolyn Barber The Crawdad Festival will not only offer great Cajun food and Crawfish Eating Contest on the opening day but will include Bayou music, a car show and much more. For more information regarding this special event call R Wild Horse Ranch 352-4222. My curiosity has kicked in and I began to peruse my cookbooks for Cajun recipes which included these crawdads who seem to be cousins of lobsters. Needless to say I am now drool- ing and the stomach is growling. Having only eaten Cajun food that others have cooked, I am not sure I can do it. The parts about cleaning and cooking the crawdads, not to speak of obtaining the crawdads, have me doubting my ability to stir up an acceptable culinary dish. Just in case a few readers want to pre- pare for the upcoming crawdad event in Tehama County I will add the following recipe 1 - can whole tomatoes 8 – ounces frozen corn 1 - teas. parsley flakes _ - teaspoon cayenne pepper 1. - pint half and half 2 – cups water 2 – tablespoons Creole or Cajun seasoning Start by cutting smoked sausage into bite sized quarters. Add sausage to a large skillet and cook until browned. Add onions to skillet and cook until tender, stirring often. Next add water, tomatoes, corn okra and Creole or Cajun seasoning. Simmer for 15-20 minutes. Add your remaining ingredients, the crawdads and half-and half. Sim- mer for an additional ten minutes. This can be served as is or over steamed rice (Jumbo) with sweet cornbread. Yes, I am now drooling it makes it hard for me to sing; "Jambalaya, Crawfish pie, filet gumbo," while heading for the kitchen. Carolyn Barber has been writing her column in the Daily News since 1992.
