Divide the beef into 8 burgers. Season on both sides with salt and pepper, to taste. Grill or cook in the skillet for 3-4 minutes on each side for medium-rare doneness. During last minute of cooking, add cheese slice to each burger, cover grill and let melt, about 2 minutes. Place burger on bun and top with horseradish mustard, lettuce, grilled Vidalia onions, pickles and ketchup. Emblem Mother's Day contribution At its May meeting, the Red Bluff Emblem Club's Mother's Day March yielded $75 for the scholarship fund of the California-Nevada-Hawaii State Associa- tion of Emblem Clubs. The scholarship is for graduate study of teachers specializing in working with the deaf and hearing impaired. The nine-hole tournament is designed so all can par- ticipate and have fun, regardless of golfing ability. It will be followed by a barbecue lunch and the cost is $50 per player and $10 for an additional barbecue tick- et for guests.
