CRUNCHY ONION BBQ CHICKEN Amy Ross ½ cup BBQ sauce ½ t. pepper 1 ½ c. crushed French fried onions ¼ c. Parmesan cheese, shredded 1 ½ lb. boneless, skinless chicken breast tenders Place BBQ sauce in shallow bowl. Combine pepper, crushed onions and cheese in another bowl. Dip chicken into BBQ sauce, then dip only one side of chicken into crushed onions. Place chicken crumb side up on a sprayed baking sheet. Bake at 400 degrees for 20-25 minutes or until done. HAM AND RED EYE GRAVY Stella Putnam 1 lb. country ham slices 4 T. butter ¾ -1 cup coffee, brewed 1/8 t. salt 1/8 t. pepper Using an iron skillet, cook ham in butter slowly, on low to med. heat. Re- move from skillet. Add coffee, salt and pepper. Stir well. Add ham back to skillet. Serve with grits. SUNDAY ROAST Tommy Thompson 3 lbs. rump or eye-of-round roast Flour, enough to coat and make gravy Salt to taste Pepper to taste Oil, to coat bottom of skillet 3-4 T. water Combine flour, salt and pepper. Pat roast dry and coat with flour mixture. Thoroughly brown roast in cooking oil in large skillet. Place roast into small covered roasting pan, add water. Bake at 275 degrees for 4 ½ to 5 hours. Thicken gravy with flour and pour over roast. (Called Sunday roast be- cause it can be placed in oven around 8 a.m. and will be fork tender when you return home from church about 12:30. FRUIT PIZZA Deb Dover 1 large sugar cookie roll Kiwi Strawberries Blueberries Oranges 1 cup orange marmalade 8 oz. cream cheese, room temperature 1 cup sugar 1 t. vanilla Pat sugar cookie dough onto a pizza pan. Bake ac- cording to package direc- tions. Let cool. Mix cream cheese, sugar and vanilla. Put on cold cookie. Ar- range fresh fruit. Melt marmalade and brush over fruit.
