july 24-30, 2022 What's up! 47 try these recipes Zucchini dreams Summer's bounty makes for plenty of yummy creations Lemon Zucchini Bread Ingredients • 1 ½ cups shredded zucchini • ¾ cup white sugar • 1 egg • ½ cup vegetable oil • 1 ½ cups all-purpose flour • ½ teaspoon salt • ½ teaspoon baking soda • ¼ teaspoon baking powder • 1 teaspoon ground cinnamon • 2 teaspoons lemon zest Directions 1. Preheat oven to 325 degrees F (165 degrees C). Grease an 8x4 inch loaf pan. 2. In a bowl, beat together the zucchini, sugar, egg, and oil. In a separate bowl, sift together the flour, salt, baking soda, and baking powder; stir in the cinnamon and lemon zest. Stir the flour mixture into the zucchini mixture just until blended. Pour the batter into the prepared pan. 3. Bake 45 minutes in the preheated oven, until a knife inserted in the center comes out clean. Remove from heat, and cool about 10 minutes before turning out onto a wire rack to cool completely. Balsamic Grilled Zucchini Ingredients • 2 zucchinis, quartered lengthwise • 2 teaspoons olive oil • 1 teaspoon Italian seasoning • ½ teaspoon garlic powder • 1 pinch salt • 2 tablespoons balsamic vinegar Directions 1. Preheat an outdoor grill for medium-low heat and lightly oil the grate. 2. Brush zucchini with olive oil. Sprinkle Italian seasoning, garlic powder, and salt over zucchini. 3. Cook on the preheated grill until beginning to brown, 3 to 4 minutes per side. Brush balsamic vinegar over zucchini and continue cooking 1 minute more. Serve immediately. Zucchini Puffs Freeze grated zucchini in 2 cup portions for winter Puffs! Ingredients • 2 cups shredded zucchini • 2 eggs • ¼ cup finely chopped onion • 1 clove garlic, minced • 1 ½ cups buttermilk baking mix • salt and ground black pepper to taste • oil for frying Directions 1. In a large bowl, combine zucchini, eggs, onion, and garlic. Blend in baking mix, salt and pepper. 2. Heat 1/2 inch of oil in deep-fryer to 375 degrees F (190 degrees C). 3. Drop batter by spoonfuls into hot oil, and fry until evenly brown and fluffy. Drain on paper towels. Sprinkle with salt before serving. Courtesy allrecipes.com
