Favorite fall cookies try theserecipes Easy Pumpkin Spice Cookies Ingredients • 1 (18.25 ounce) package spice cake mix • 1 (15 ounce) can solid pack pumpkin Directions 1. Preheat oven to 350 degrees F. Grease cookie sheets. 2. In a large bowl, stir together the cake mix and pumpkin until well blended. Drop by rounded spoonfuls onto the prepared cookie sheet. 3. Bake for 18 to 20 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Glazed Apple Cookies Ingredients • ½ cup shortening • 1 1/3 cups packed brown sugar • 1 egg • 2 cups sifted all-purpose flour • 1 teaspoon baking soda • ½ teaspoon salt • 1 teaspoon ground cinnamon • ½ teaspoon ground cloves • ¼ teaspoon ground nutmeg • 1 cup chopped walnuts • 1 cup apples - peeled, cored and finely diced • 1 cup raisins • ¼ cup milk • 1 ½ cups sifted confectioners' sugar • 1 tablespoon butter • ½ teaspoon vanilla extract • 2 ½ tablespoons half-and-half cream Directions 1. Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly. 2. Stir together flour, baking soda, salt, cinnamon, cloves and nutmeg. 3. Stir half the dry ingredients into creamed mixture. Stir in nuts, apple and raisins, then stir in remaining half of dry ingredients and milk. Mix well. 4. Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet. Bake in a preheated 400 degree oven for 10-12 minutes. Remove cookies to racks and while still warm, spread with glaze. 5. To make Glaze: Combine powdered sugar, butter, vanilla and enough cream to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies. Salted Caramel Chocolate Chip Cookies Ingredients • 3 cups all-purpose flour • 1 teaspoon baking soda • 1 teaspoon coarse salt • 1 ¾ cups brown sugar • 1 cup unsalted butter, softened • ¼ cup white sugar • 2 large eggs • 2 teaspoons vanilla extract • 2 cups chocolate chips • 18 eaches unwrapped caramel candies (such as Werther's®), each cut into 6 pieces Directions 1. Preheat oven to 350 degrees F (175 degrees C). 2. Whisk flour, baking soda, and salt together in a bowl. 3. Beat brown sugar, butter, and white sugar together in a bowl using an electric mixer until creamy. Beat eggs, 1 at a time, into butter mixture until blended; beat in vanilla extract. Stir flour mixture into butter mixture until dough is just combined; fold in chocolate chips. 4. Divide dough into thirty six 2 tablespoon-size balls; arrange on a baking sheet. Press 3 caramel pieces into each dough ball. 5. Bake in the preheated oven until edges are golden brown, 13 to 15 minutes. Transfer cookies to a wire rack to cool. Note: By strategically placing the caramels in the cookie dough ball instead of mixing it in the cookie dough itself, it allows for a prettier cookie and the caramel has less tendency to spill out onto the cookie sheet.
