Birthday Hendrickson ce le br at es 9 7 this Chateaubriand steak recipe is from Best of Beef, 261 prize winning National Beef Cook-off recipes Chateaubriand Steak IngredIents 1 boneless beef sirloin, cut 1 inch thick (about 1 1/2 to 2 pounds) 1 cup Madeira wine 1 clove garlic, cut in half 2 tablespoons olive oil 4 large mushrooms, stems removed and sliced 6 tablespoons butter 1/4 cup flour 1 beef bouillon cube 2 cups hot water salt and freshly ground pepper, if desired dIrectIons 1. Place beef sirloin steak in utility dish or plastic bag; add Madeira wine, turning to coat. Cover dish or tie bag securely and marinate in refrigerator 6 to 8 hours (or overnight, if desired), turning occasionally. 2. Pour off marinade; reserve. Note: this recipe was before we became aware of food safety, and now you are told to discard the marinade. 3. rub surface of steak with garlic and oil. Broil steak on grid over medium coals. test about 4 inches above coals for medium with 4-second count. turning once. Broil 16 to 20 minutes, or to desired degree of done- ness. 4. Meanwhile cook mushrooms in butter in saucepan until lightly browned. remove mushrooms with slotted spoon; reserve. Add flour to saucepan, stirring until smooth. Dissolve bouillon cube in hot water and gradu- ally add with reserved marinade, stirring constantly. return mushrooms to sauce; keep warm. 5. Place steak on platter. Pour half of sauce over steak and pass remaining sauce. Cut into 4 serving-size pieces. PreParatIon 4 servings. Rain held off and the weather was dry enough for a fun event. More than 75 students, teachers, and parents were involved.
