3 GAMMA RHO REPORT Doug's Dining Douglas Dunlay '90 on Brotherhood and the Restaurant Business T he fraternity experience doesn't always start at freshman year. Some brothers have legacy connections, while others may form positive first impressions before college. For Douglas Dunlay '90, he was fortunate to learn about ATΩ during his senior year of high school through an introduction by a few older friends who joined Gamma Rho. "Moving right into the House as a freshman, I quickly found lifelong friends and learned what true brotherhood meant," Doug said. He enjoyed cornjigger, date parties, football Saturdays, and everything about the pledgeship experience. "I am still close with not only my pledge brothers, but also many other brothers older and younger than me—all of whom I have the utmost respect for, as both the men they were and the people they have grown into." Doug's responsibilities as a pledge trainer and kitchen steward prepared him for life after college, especially as he spent six months on a cooking externship in the Netherlands. Once home, Doug became a restaurant manager for Houston's Restaurants. He worked his way up to general manager before deciding to open his own restaurant in 2002, later followed by his own group. From the daunting goal of opening that first location to the established success of his restaurant group, Doug's determination has paid off massively. He urges undergraduates to stay positive and maintain a healthy work/life balance when considering their own goals. "Stay humble! You and your business are only as good as every employee you have on your team. Train them, teach them, empower them, praise them!" While his career is thriving, Doug always takes time to reconnect with Gamma Rho brothers. He enjoys visiting campus every other year for a football game or other events, and Doug is part of a text chain with his pledge brothers. He has even been able to keep up with some brothers through business connections. Doug's restaurant group owns and operates eight restaurants in Chicago with plans for expansion currently in the works. In his spare time, Doug enjoys spending time with his wife and their three children, Hutch (15), Donovan (14), and Scout (11). Sons Hutch and Donovan play hockey and help in Doug's restaurant, The Smoke Daddy. You can connect with Doug and learn about his restaurants at dougdunlay@yahoo.com.
