october 9-15, 2022 What's up! 47 try these recipes Loaves to love Put your loaf pan to good use with these yummy recipes Banana-Zucchini Bread Ingredients • 3 eggs • ¾ cup vegetable oil • 2/3 cup packed brown sugar • 1 cup white sugar • 1 cup grated zucchini • 2 bananas, mashed • 2 teaspoons vanilla extract • 3 ½ cups all-purpose flour • 1 tablespoon ground cinnamon • 1 ½ teaspoons baking powder • 1 teaspoon baking soda • 1 teaspoon salt • ½ cup dried cranberries • ½ cup chopped walnuts Directions 1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour two 8x4 inch bread loaf pans. 2. In a large bowl, beat eggs until light yellow and frothy. Add oil, brown sugar, white sugar, grated zucchini, bananas, and vanilla; blend together until well combined. Stir in the flour, cinnamon, baking powder, baking soda, and salt. Mix in the cranberries and nuts. Divide the batter evenly between the two prepared loaf pans. 3. Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes. Allow to cool in the loaf pans on a wire rack before removing and serving. Caramel Apple Loaf Cake Ingredients Cake: • ¾ cup white sugar • ¼ cup applesauce • 1 large egg, at room temperature • 1 tablespoon vegetable oil • 1 teaspoon vanilla extract • 1 cup all-purpose flour • 1 teaspoon baking soda • 1 teaspoon ground cinnamon • ½ teaspoon salt • 2 ½ cups apples - peeled, cored, and chopped • ½ cup chopped nuts Caramel: • ¼ cup brown sugar • 2 tablespoons butter • 2 tablespoons heavy cream • ½ teaspoon corn syrup Directions 1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan. 2. Beat sugar, applesauce, egg, oil, and vanilla with an electric mixer in a bowl until well combined. 3. Sift flour, baking soda, cinnamon, and salt together in a second bowl. Add to sugar mixture and stir to combine. Fold in apples and nuts. Pour batter into the prepared loaf pan. 4. Bake in the preheated oven until a toothpick inserted in center comes out clean, 45 to 55 minutes. Cool on a wire rack for 10 minutes. Remove from pan and cool completely. 5. Combine brown sugar, butter, heavy whipping cream, and corn syrup in a small saucepan. Bring to a boil and cook, stirring constantly, for 1 minute. Let caramel cool, then drizzle over cake. Chocolate Chip Pumpkin Bread Ingredients • 3 cups white sugar • 1 (15 ounce) can pumpkin puree • 1 cup vegetable oil • 2/3 cup water • 4 eggs • 3 ½ cups all-purpose flour • 1 tablespoon ground cinnamon, or to taste • 1 tablespoon ground nutmeg, or to taste • 2 teaspoons baking soda • 1 ½ teaspoons salt • 1 cup miniature semisweet chocolate chips • ½ cup chopped walnuts Directions 1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9x5-inch loaf pans (or three empty 16-ounce coffee tins). 2. Combine sugar, pumpkin, oil, water, and eggs in a large bowl; beat with an electric mixer until smooth. Blend in flour, cinnamon, nutmeg, baking soda, and salt. Fold in chocolate chips and nuts. Evenly divide batter between the the prepared pans; they should be 1/2 to 3/4 full. 3. Bake in the preheated oven until a knife inserted in the center comes out clean, about 1 hour. 4.
