May 2-8, 2021 What's up! 47 Speedy weeknight suppers try theserecipes For those nights when you "haven't even thought about dinner" Easy Crispy Baked Chicken Ingredients • 2 cups crushed saltine crackers • 1 teaspoon seasoned salt • 1 pinch garlic powder, or to taste • 6 skinless, boneless chicken breast halves • ½ cup margarine, melted Directions 1. Preheat oven to 425 degrees F. Grease a baking dish. 2. Mix cracker crumbs, seasoned salt, and garlic powder in a shallow bowl. Dip chicken breasts into melted margarine and press into cracker mixture until coated. Arrange chicken in prepared baking dish. 3. Bake in preheated oven until chicken breasts are no longer pink in the center and the juices run clear, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F. Emily's Excellent Taco Casserole Ingredients • 6 cups corn tortilla chips • 2 cups vegetarian chili with beans • 1 cup shredded Cheddar cheese • 2 cups shredded lettuce • 2 roma (plum) tomatoes, chopped • ½ cup salsa • ¼ cup sour cream Directions 1. Preheat the oven to 350 degrees F (175 degrees C). 2. Place chips in the bottom of a 9 inch square baking dish. Pour chili straight from the can over the chips. Sprinkle shredded cheese over the top. 3. Bake for 20 to 25 minutes in the preheated oven, until chili is bubbling and cheese is melted. Top with lettuce, tomato, sour cream and salsa in the pan, or after serving. Meatloaf Muffins with Oats Ingredients • 1 teaspoon olive oil, or as needed • ¾ cup chopped onion • ¼ cup chopped green bell pepper • 1 pound ground turkey • ½ pound mild bulk pork sausage • ¾ cup rolled oats • ½ cup ketchup (Optional) • ¼ cup finely chopped carrot • 1 egg, slightly beaten • 1 tablespoon Worcestershire sauce • ½ teaspoon minced garlic • ½ teaspoon salt • ¼ teaspoon ground black pepper • 1 tablespoon ketchup, or as needed (Optional) • 3 slices bacon, or as needed (Optional) Directions 1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 12-cup muffin tin. 2. Heat oil in a skillet over medium-high heat. Saute onion and bell pepper in the hot oil until softened, 5 to 7 minutes. Remove from heat and let cool slightly, about 10 minutes. 3. Combine sauteed onion mixture, turkey, sausage, oats, 1/2 cup ketchup, carrot, egg, Worcestershire sauce, garlic, salt, and pepper in a large bowl. Mix lightly and thoroughly. 4. Spoon mixture evenly into the prepared muffin tin using an ice cream scoop, filling each to the top, mounding if necessary. Top each with a drizzle of ketchup and about 1/5 slice of bacon. 5.
