BARTENDER: Chad Douglass ESTABLISHMENT: Hawkeye Bar and Grill, Otesaga Hotel, 60 Lake St., Cooperstown HOMETOWN: Canajoharie AGE: 35 ROMANTIC STATUS: Single but living with someone SURPRISING FACT: Has done radio commercials and voice over work; Was the P.A. announcer for the University of Buffalo hockey team while in college “A lot of our busi- ness is classic cocktails – martinis, Manhattans and that stuff – made the traditional way. I’ve been doing it for 10 years, so I en- joy the heck out of it. I love that we do the drinks the way they’re supposed to be done and keep that tradition alive, not that there isn’t room for (innovation) – I like to come in and play around with new stuff, too.” 6 O-Town Scene March 3, 2011 The Bourbon Old-Fashioned 3 dashes Angostura bitters mix cherry orange slice simple syrup bourbon In a rocks glass, muddle three dashes of Angostura bitters mix, a cherry, an orange slice and a little simple syrup (water with as much sugar mixed in as possible). Cover mixture with ice and pour bourbon in glass until full. “You’ve got the aromatics and herds of the Angostura bitters, you’ve got some sweetness of sugar and the fruit juices and then you’ve got that big bourbon back, which is a sweeter sour-mash whiskey.” Interview and photo by Trevor Hayes
