try theserecipes Simple skillet dinners Courtesy allrecipes.com One-pan meals feature bright spring veggies and easy clean-up Skillet Spinach Lasagna Ingredients • 1 pound Italian sausage roll • 8 lasagna noodles, broken into pieces • 1 (28 ounce) can crushed tomatoes • 1 (8 ounce) can tomato sauce • 2 cups torn fresh spinach • ½ cup ricotta cheese • 4 ounces fresh mozzarella cheese, sliced • ¼ cup grated Parmesan cheese Directions 1. Heat a large skillet over medium-high heat. Cook and stir sausage, breaking into smaller pieces, in the hot skillet until browned and crumbly, 5 to 7 minutes. Mix noodles into sausage. 2. Pour crushed tomatoes and tomato sauce over sausage-noodle mixture; bring to a boil. Cover skillet, reduce heat, and simmer until noodles are cooked and sauce is thickened, about 25 minutes. Add spinach, ricotta cheese, and mozzarella cheese; cover skillet and remove from heat. Let lasagna stand for 5 minutes; top with Parmesan cheese. Ingredients • ¾ cup water • 3 tablespoons soy sauce • 3 tablespoons packed brown sugar • 1 ½ tablespoons cornstarch • 1 tablespoon honey • ¼ teaspoon ground ginger • 2 tablespoons sesame oil, divided • 1 pound beef sirloin steak, cut into strips • 1 small head broccoli, broken into florets • 6 ounces snow peas • 1 medium red & yellow bell pepper, cut into strips • 2 cloves garlic, minced • 2 tablespoons chopped green onions Directions 1. Whisk water, soy sauce, brown sugar, cornstarch, honey, and ginger together in a bowl until well combined. 2. Heat 1 tablespoon sesame oil in a large wok or skillet over medium-high heat. Add steak and cook and stir until browned, about 4 minutes. Move steak to the side of the wok. Add remaining tablespoon sesame oil to the center of the wok, followed by broccoli, snow peas, bell pepper, and garlic. Cook, stirring the vegetables, for 2 minutes. 3. Add reserved sauce to the wok and stir everything together. Bring to a boil and cook until the sauce thickens and the vegetables are crisp-tender, about 2 minutes. 4. Ingredients • ½ cup all-purpose flour • 1 tablespoon dried parsley • 1 teaspoon dried basil • 1 ½ pounds skinless, boneless chicken breasts, cut into strips • ¼ cup extra-virgin olive oil • 1 tablespoon minced garlic • 2 ¼ cups low-sodium chicken stock • 1 cup frozen mixed vegetables • 1 pint grape tomatoes, halved • 1 bunch green onions, diagonally sliced • 1 medium zucchini, quartered and sliced • 2 tablespoons sun-dried tomato pesto • salt and ground black pepper to taste Directions 1. Whisk together flour, parsley, and basil in a medium bowl. Add chicken strips and toss until well coated. 2. Heat olive oil in a large skillet over medium heat. Add chicken and cook, turning occasionally, until lightly browned on the outside and no longer pink, about 10 minutes. Add garlic and cook for 1 minute. 3. Add chicken stock, mixed vegetables, grape tomatoes, green onions, zucchini, and pesto. Cook, stirring occasionally, until heated through, about 10 minutes.
