JANUARY 29-febRUARY 4, 2023 WhAt's Up! 47 try these recipes Low cost, big taste Stretch your budget deliciously with these inexpensive recipes Lentil Soup Ingredients • ¼ cup olive oil • 1 onion, chopped • 2 carrots, diced • 2 stalks celery, chopped • 2 cloves garlic, minced • 1 bay leaf • 1 teaspoon dried oregano • 1 teaspoon dried basil • 2 cups dry lentils • 8 cups water • 1 (14.5 ounce) can crushed tomatoes • ½ cup spinach, rinsed and thinly sliced • 2 tablespoons vinegar • salt to taste • ground black pepper to taste Directions 1. Heat oil in a large soup pot over medium heat. Add onions, carrots, and celery; cook and stir until onion is tender, 3 to 5 minutes. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes. 2. Stir in lentils, and add water and tomatoes. Bring to a boil. Reduce heat and let simmer until lentils are tender, at least 1 hour. 3. When ready to serve, stir in spinach and cook until it wilts. Stir in vinegar and season with salt and pepper; taste and adjust as needed. Chef John's Stuffed Peppers Ingredients • 1 cup uncooked long grain white rice • 2 cups water Sauce: • 1 onion, diced • 1 tablespoon olive oil • 2 cups marinara sauce • 1 cup beef broth • 1 tablespoon balsamic vinegar • ¼ teaspoon crushed red pepper flakes Peppers: • 1 pound lean ground beef • ¼ pound hot Italian pork sausage, casing removed • 1 (10 ounce) can diced tomatoes • ¼ cup chopped fresh Italian parsley • 4 cloves garlic, minced • 2 teaspoons salt • 1 teaspoon freshly ground black pepper • 1 pinch ground cayenne pepper • 1 cup finely grated Parmigiano-Reggiano cheese, plus more for topping • 4 large green bell peppers, halved lengthwise and seeded Directions 1. Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Set the cooked rice aside. 2. Meanwhile, preheat the oven to 375 degrees F (190 degrees C). 3. Make sauce: Cook onion and olive oil over medium heat until onion begins to soften, about 5 minutes. Transfer 1/2 of the cooked onion to a large bowl and set aside. 4. Stir marinara sauce, beef broth, balsamic vinegar, and red pepper flakes into the skillet with cooked onion; cook and stir for 1 minute. 5. Pour sauce mixture into a 9x13-inch baking dish and set aside. 6. Combine ground beef, Italian sausage, diced tomatoes, Italian parsley, garlic, salt, black pepper, and cayenne pepper into the bowl with reserved onions; mix well. Stir in cooked rice and Parmigiano Reggiano. Stuff green bell peppers with beef and sausage mixture. 7. Place stuffed green bell pepper halves in the baking dish over tomato sauce; sprinkle with remaining Parmigiano- Reggiano, cover baking dish with aluminum foil, and bake in the preheated oven for 45 minutes. 8. Remove aluminum foil and bake until the meat is no longer pink, the green peppers are tender and the cheese is browned on top, an additional 20 to 25 minutes. Homemade Black Bean Veggie Burgers Ingredients • cooking spray • 1 (16 ounce) can black beans, drained and rinsed • ½ green bell pepper, cut into 2 inch pieces • ½ onion, cut into wedges • 3 cloves garlic, peeled • 1 egg • 1 tablespoon chili powder • 1 tablespoon cumin • 1 teaspoon Thai chili sauce or hot sauce • ½ cup bread crumbs Directions 1. Preheat an outdoor grill for high heat or an oven to 375 degrees. Lightly oil a sheet of aluminum foil with cooking spray (for grilling) or lightly grease a baking sheet (for baking.) 2. Mash black beans in a medium bowl with a fork until thick and pasty. 3. Finely chop bell pepper, onion, and garlic in a food processor. Stir chopped vegetables into mashed beans. 4. Stir together egg, chili powder, cumin, and chili sauce in a small bowl. Add to the mashed beans and stir to combine. Mix in bread crumbs until the mixture is sticky and holds together. Divide the mixture into four patties and place on the prepared foil or baking sheet. 5. Grill on the preheated grill for about 8 minutes on each side.
