JANUARY 8-14, 2023 WhAt's Up! 47 try these recipes Lighten up If preparing fish keeps you from eating it, check out these easy recipes Easy Baked Tilapia Ingredients • 4 (4 ounce) fillets tilapia • 2 teaspoons butter • ½ teaspoon garlic salt, or to taste • ¼ teaspoon seafood seasoning (such as Old Bay®), or to taste • 1 lemon, sliced • 1 (16 ounce) package frozen cauliflower with broccoli and red pepper • salt and ground black pepper to taste Directions 1. Preheat the oven to 375 degrees F (190 degrees F). Grease a 9x13-inch baking dish. 2. Place tilapia fillets in the bottom of the baking dish, then dot with butter and season with garlic salt and seafood seasoning. Top each fillet with a slice or two of lemon. Arrange frozen mixed vegetables around fillets and season lightly with salt and pepper. Cover the dish with aluminum foil. 3. Bake in the preheated oven until vegetables are tender and fish flakes easily with a fork, 25 to 30 minutes. Lemon-Orange Orange Roughy Ingredients • 1 tablespoon olive oil • 4 (4 ounce) fillets orange roughy • 1 orange, juiced • 1 lemon, juiced • ½ teaspoon lemon pepper Directions 1. Heat oil in a large skillet over medium-high heat. 2. Place fillets into hot oil. Drizzle with orange juice and lemon juice, then sprinkle fillets with lemon pepper. Cook until fish flakes easily with a fork, 2 to 3 minutes per side. An instant- read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Ginger Glazed Mahi Mahi Ingredients • 3 tablespoons honey • 3 tablespoons soy sauce • 3 tablespoons balsamic vinegar • 2 teaspoons olive oil • 1 teaspoon grated fresh ginger root • 1 clove garlic, crushed or to taste • 4 (6 ounce) mahi mahi fillets • salt and pepper to taste • 1 tablespoon vegetable oil Directions 1. Mix honey, soy sauce, balsamic vinegar, olive oil, ginger, and garlic together in a shallow dish. Season fish fillets with salt and pepper; place them skin-sides down in the dish with marinade. Cover and refrigerate for 20 minutes. 2. Heat vegetable oil in a large skillet over medium-high heat. Remove fish fillets, reserving marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm. 3. Pour reserved marinade into the skillet; simmer over medium heat until reduced to a glaze. Spoon glaze over fish and serve. Easy Bake Salmon Ingredients • 3 tablespoons honey • 3 tablespoons Dijon mustard • 1 teaspoon lemon juice • 4 (6 ounce) salmon steaks • ½ teaspoon pepper Directions 1. Preheat the oven to 325 degrees F (165 degrees C). 2. In a small bowl, mix honey, mustard, and lemon juice. Spread mixture over salmon steaks. Season with pepper. Arrange in a medium baking dish. 3.
