august 21-27, 2022 What's up! 47 try these recipes Grab and go breakfasts Hectic mornings call for these quick, wholesome ideas Chocolate Coconut Overnight Oats Put all ingredients in a 12-ounce mason jar and vigorously shake to make preparation a breeze! Ingredients • 1 cup chocolate-flavored almond milk • ¾ cup old-fashioned rolled oats • 1 tablespoon chia seeds • 1 tablespoon packed shredded sweetened coconut • 1 tablespoon maple syrup • 1 tablespoon unsweetened cocoa powder • 1 splash vanilla extract Directions 1. Mix almond milk, oats, chia seeds, coconut, maple syrup, cocoa powder, and vanilla extract in a 12-ounce mason jar. 2. Cover and refrigerate, 8 hours to overnight. Stir and serve cold. Cook's Note: Cashew milk can be used in place of the almond milk, if desired. Chewy Granola Bars You can make them your own by picking different ingredients to add in! Try using any combination of miniature chocolate chips, sunflower seeds, raisins, chopped dried fruits, candy coated chocolate pieces, chopped nuts, etc. Ingredients • 4 ½ cups rolled oats • 1 cup all-purpose flour • 1 teaspoon baking soda • 1 teaspoon vanilla extract • 2/3 cup butter, softened • ½ cup honey • 1/3 cup packed brown sugar • 2 cups miniature semisweet chocolate chips Directions 1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x13 inch pan. 2. In a large mixing bowl combine the oats, flour, baking soda, vanilla, butter or margarine, honey and brown sugar. Stir in the 2 cups assorted chocolate chips, raisins, nuts etc. 3. Lightly press mixture into the prepared pan. Bake at 325 degrees F (165 degrees C) for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving. Healthy Strawberry Banana Muffins Ingredients • 1 ¼ cups whole wheat flour • ¼ cup quinoa flour • 1 teaspoon baking powder • 1 teaspoon baking soda • ½ teaspoon salt • 3 bananas • 1 cup sliced strawberries • 1/3 cup honey • 1/3 cup canola oil • 1 egg • 1 teaspoon vanilla extract (Optional) Directions 1. Preheat oven to 375 degrees F (190 degrees C). Line a muffin tin with paper liners. 2. Sift whole wheat flour, quinoa flour, baking powder, baking soda, and salt into a large bowl. 3. Combine bananas, strawberries, honey, oil, egg, and vanilla extract in a blender; blend until small chunks remain or mixture is completely smooth. Pour over whole wheat flour mixture; mix until batter is combined. 4. Spoon batter into the prepared muffin cups. 5. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Transfer to a wire rack to cool. Courtesy allrecipes.com
