Star-Spangled Burgers Ingredients • 2 pounds ground beef • 1 large red bell pepper, diced • 2 cloves fresh garlic, minced • 1 teaspoon salt • 1 teaspoon ground black pepper • 2 (4 ounce) packages crumbled blue cheese • 8 hamburger buns Directions 1. Preheat an outdoor grill for medium-high heat and lightly oil the grate. 2. Mix ground beef, red pepper, garlic, salt, and pepper in a large mixing bowl; divide and form into 16 patties. Place 1 ounce blue cheese in the center atop each of 8 of the patties. Top each cheese-topped patty with an unadorned patty, pressing the sides together so the cheese doesn't fall out. 3. Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, 7 to 10 minutes per side for well done. An instant-read thermometer inserted into the meat should read 160 degrees F (70 degrees C). Patriotic Fruit Pizza Ingredients • 2 ¾ cups all-purpose flour • 1 teaspoon cream of tartar • 1 teaspoon baking soda • ¼ teaspoon salt • ½ cup vegetable shortening • ½ cup margarine, softened • 1 ½ cups white sugar • 2 eggs • 1 teaspoon vanilla extract • 2 (8 ounce) packages cream cheese, softened • 1 cup white sugar • 2 teaspoons vanilla extract • 3 large bananas, sliced - or as needed • 1 tablespoon lemon juice, or as needed • 1 (16 ounce) package fresh strawberries, sliced • 1 (6 ounce) container fresh blueberries Directions 1. Preheat oven to 350 degrees F (175 degrees C). Whisk the flour, cream of tartar, baking soda, and salt in a bowl. 2. In a large mixing bowl, mash the vegetable shortening and margarine together until thoroughly combined, and beat in 1 1/2 cup of sugar, eggs, and 1 teaspoon of vanilla extract. Mix in the flour mixture to make a workable dough, and spread the dough out in a rectangle shape onto an ungreased 12x17 inch baking sheet. 3. Bake in the preheated oven until very lightly browned, 8 to 10 minutes. Allow to cool completely. 4. While the cookie base is cooling, mash the cream cheese with 1 cup of sugar and 2 teaspoons of vanilla extract in a bowl until smooth. Place sliced bananas in a bowl, and gently toss with lemon juice to prevent browning. 5. To decorate the pizza, spread the cream cheese filling all over the cookie base in an even, smooth layer. Place the blueberries in a square in neat, closely-spaced rows, in the left upper corner for blue stars. Arrange alternating stripes of white bananas and red strawberry slices across the pizza. Refrigerate leftovers. Red, White, and Blueberry Grilled Chicken Ingredients • 1 tablespoon vegetable oil • 1 tablespoon kosher salt • 1 tablespoon paprika • 1 teaspoon ground dried chipotle pepper • ½ teaspoon cayenne pepper • ½ teaspoon freshly ground black pepper • 2 cloves minced garlic • 4 skinless, boneless chicken breast halves Blueberry Gastrique: • 1/3 cup white sugar • 1/3 cup apple cider vinegar • 2 cups fresh blueberries • salt and freshly ground black pepper to taste Directions 1. Whisk oil, salt, paprika, chipotle pepper, cayenne pepper, black pepper, and garlic in a bowl to make marinade. Place chicken breasts in marinade and turn to coat evenly. Cover bowl with plastic wrap and refrigerate for at least 2 hours. 2. Spread sugar in a saucepan set over medium heat. Do not stir, but watch closely as sugar begins to melt after about 1 minute. As sugar melts it will gradually turn a golden color. Continue watching but not stirring. When all sugar has melted and golden color just begins to darken a bit (after 1 minute or less), remove pan from heat. Pour in vinegar and stir until sugar dissolves. 3. Place pan over medium-high heat and add blueberries to the sugar-vinegar mixture. Bring to a simmer, reduce heat to medium-low, and simmer until blueberries soften and mixture begins to thicken, 4 or 5 minutes. It should be a syrup-like consistency. If sauce seems too thin, simmer a few more minutes. If it seems too thick, add a splash of water. Stir in salt and pepper. Remove from heat. 4. Set a strainer over a bowl. Strain berries, using a spatula to push through as much juice as possible. Discard skins. 5. Preheat an outdoor grill for medium-high heat and lightly oil the grate. Drain excess marinade from chicken. 6. Place chicken breasts on preheated grill. Cook until no longer pink in the center and the juices run clear, about 4 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a plate and allow to rest a few minutes. 7. Serve breasts on a swirl of blueberry sauce with more sauce drizzled on top. Cook's Notes: If you make the sauce ahead, your sauce will thicken, and you will probably need to thin it out with some water. When tasting for seasoning, remember this is going to go on highly seasoned meat. Tips As far as chicken doneness goes, check with a thermometer. If you cook a lot of chicken, it's fairly easy to tell by feel, but why take a chance? Cook to 150 degrees F (65 degrees C), which left to rest for a minute, should be safe, and very juicy.
