September 13-19, 2020 What'S up! 47 Sweet and savory appetizers are great picks for fall Apple apps try theserecipes Apple and Feta Pan Fried Pizzas Ingredients • 6 ½ ounces dry pizza crust mix • ½ cup hot water • 5 tablespoons olive oil • 8 ounces crumbled feta cheese • 1 red onion, thinly sliced • 1 tablespoon chopped fresh thyme • ½ tablespoon butter • 4 medium apples, cored and chopped • 1 teaspoon ground black pepper to taste Directions 1. In a medium bowl, combine contents of the pizza dough package and 1/2 cup hot water. Stir vigorously, about 25 strokes. Set the bowl in a warm place (about 85 degrees F, or 35 degrees C) for 5 minutes. Turn dough onto floured board, divide the dough into 8 small sections. Knead the dough and shape it into rounds. 2. Preheat the oven to 300 degrees F (150 degrees C). 3. In a large skillet, heat the olive oil. Add the dough and fry until the dough is lightly browned, flipping once to brown on both sides. Once cooked, place the circles on a cookie sheet. Sprinkle the feta, red onion, and thyme on top of the circles. 4. Bake the pizzas until the feta begins to brown, about 10 to 12 minutes. 5. While the pizzas bake, in the previously used skillet, heat 1/2 tablespoon of butter and a few sprigs of thyme. Mix the apples into the skillet, and cook until the apples are soft and golden. Lay the apples on top of the pizzas, season with pepper, and serve. Baked Brie with Maple Caramelized Apples and Spiced Praline Bacon Ingredients • 3 slices bacon • 2 tablespoons finely chopped pecans • 1 tablespoon brown sugar • 1 teaspoon chili powder • 1 pinch sea salt to taste • 2 tablespoons unsalted butter • 2 Golden Delicious apples - peeled, cored, and cut into 1/2-inch thick slices • 3 tablespoons pure maple syrup • ¼ teaspoon ground cinnamon • 1 (8 ounce) round Brie cheese • 1 teaspoon chopped fresh rosemary Directions 1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil. 2. Lay bacon on the prepared baking sheet. Mix pecans, brown sugar, chili powder, and sea salt together in a bowl. Sprinkle evenly over the bacon. 3. Bake in the preheated oven until crisp, and browned, 18 to 20 minutes. Transfer to a rack to cool. Chop bacon into rough pieces. 4. Melt butter in a nonstick skillet over medium-high heat. Add apples and 1 tablespoon maple syrup. Saute, stirring only every 60 to 90 seconds, until apples are tender and brown, about 8 minutes. Mix in remaining 2 tablespoons maple syrup and cinnamon. Transfer to a bowl. 5. Cut a round of parchment paper slightly larger than the round of Brie cheese. Place the Brie cheese on the parchment paper; place onto a baking sheet. Top with the cooked apples to make a big mound. 6. Bake in the hot oven for 5 minutes. Add bacon-praline mixture on top of the Brie. Continue baking until top is bubbly, 2 to 3 minutes more. Transfer to a serving platter using a large spatula. Sprinkle with sea salt and rosemary. Apple Goat Cheese Bruschetta Ingredients • ¼ cup crumbled goat cheese • 1 Fuji apple - peeled, cored, and chopped • ¾ teaspoon chopped fresh thyme • ½ teaspoon chopped fresh oregano • ¼ teaspoon coarse ground black pepper • 8 thin slices French bread Directions 1. Preheat the oven's broiler and set the oven rack 3 to 4 inches from the heat source. 2. Toss together the goat cheese, apple, thyme, oregano, and pepper in a bowl; set aside. Arrange the bread slices on a baking sheet; toast the bread under the broiler until golden brown, 1 to 2 minutes. 3. Sprinkle the goat cheese mixture evenly over the bread slices. Return bread to oven to broil until cheese is softened, about 1 minute more. Courtesy allrecipes.com
