It helps to know your Samosas from your Pakoras – and please don't order a fiery Vindaloo when a mild Korma is more to your liking. Here are some common food terms to make sure that your taste buds sing. • Aloo: Potatoes • Biryani: Stir-fried rice with seasonings, vegetables and a choice of meat or chicken • Chaat: Savory snacks • Channa: Chickpeas • Dhal: Lentils • Gobi: Cauliflower • Jalfriezie: A curry made with mixed vegetables in a cream or tomato sauce • Khir: Sweet rice pudding • Korma: A mildly spiced curry dish made with coconut cream, raisins, pineapple and nutmeg • Chicken or shrimp is oen added to the aromatic sauce • Lassi: Traditional yogurt-based drink, oen blended with mangoes • Masala: A mixture of spices • Naan: Flat bread; may be made in the tandoor oven, oen plain or with garlic or green onion • Pakora: Balls of chickpea dough deep- fried with bits of spinach, onion and corn Typically two to three bites • Paneer: Homemade cheese • Saag: Spinach • Samosa: Triangular-shaped, deep-fried turnover stuffed with diced potatoes, peas, carrots and onions • Sheera: A dessert of Cream of Wheat sweetened with sugar, raisins, butter and cardamom • Tandoor: A cylindrical clay or metal oven used for baking at high temperatures • Tikka: Dish of marinated meat or chicken • Vindaloo: Vinegar-based dish with potatoes and spices; add chicken, fish, shrimp, lamb or goat Only order if you like extra-spicy Chef Kelly, who learned to cook in her native India, had done catering in the Carolinas and Virginia, but the restaurant business was new to her.
