APRIL 29-MAY 5, 2018 WHAT'S UP! 43 "I love the shrimp and penne Alfredo," Victor said. "I pride myself on our Alfredo. The red sauce can be made in big quantities at a time and kept, but the Alfredo is different. When we make Alfredo it's made when it's ordered. It has nothing but fresh minced garlic, butter, mushrooms and a little olive oil. We add white wine to it and reduce it down. Then we add heavy whipping cream and parmesan cheese and let that cook down. We add just a bit of lemon juice at the end." Celebrate with us Victor is proud of his sauces, but when you talk about his bread, his pride really comes through. "Our bread is the best in town," he said. "We won grand champion at the Washington County Fair with our Asiago cheese bread, which is what we use for our sandwiches. There is no bread purchased here at the restaurant. We make it all from scratch. We make Italian baguettes. We make Italian loaves. We have Asiago cheese roles. We donate 20 to 30 loves of bread a week to the meals on wheels program in Farmington." If you haven't checked out DeMarco's yet, Victor said make the short drive to Farmington and sit down for a meal. "We pride ourselves on the quality of our food," he stressed. "We want everybody to feel like it's family. In Italy when people come over to eat… it's "enjoy" and "mangia." Come eat and come enjoy. It's about eating and celebrating.
