42 WHAT'S UP! DECEMBER 24-30, 2017 V ictor DeMarco is proud of his Italian heritage, proud of his family and proud of DeMarco's Italian Dining and Pizza, his new restaurant. Open since August, he recently added an Italian buffet to his daily menu. "We now offer a full pizza and paste buffet and salad bar," the 54-year-old said. "The pasta buffet has meatballs, Italian sausage, two different sauces, three different pastas and a specialty dish of some kind." The new buffet line also includes soup options in rotation. "We also have a soup of the day," he explained. "We have tomato basil. I'm going to offer Italian chili. Another soup is broccoli cheddar and I'll make minestrone. There will be a different soup every couple of days." Victor assures the Italian cuisine you will find on his buffet will always be fresh. "We put a little bit out on the line at a time and we have three people to keep track of it. We don't want anything to dry out.
