Salad over Sirloin Maxine and her husband Rich have a commercial cow/calf ranch in Northern California. She was a hands-on helper who rode, fixed fence, marked and branded, until one day while working the ground crew during a branding, she got hit by a horse and had to be taken to the hospital to get stitched up. After that her husband thought it might be a better idea to put her on desk duty, where she keeps things straight; payroll, bookkeep- ing, workman's comp for the ranch. She is always willing to help, dependable and hardwork- ing. Salad over Sirloin is the recipe from Maxine Morgan. 1 1/2 lb boneless sirloin steak 1 1/4 inch thick coarse salt and freshly ground black pepper, to taste Salad: 1 cup diced (1/4 inch) hothouse seedless cucumber 1 cup diced (1/4 inch) seeded ripe tomatoes 1 cup diced (1/2 inch) fresh feta cheese 1/2 cup diced (1/4 inch) red onion 1/2 cup coarsely chopped pitted black olives 1/4 cup chopped fresh flat-leaf parsley salt and pepper, to taste 1/4 cup extra-virgin olive oil 1/4 cup red-wine vinegar 1. Combine the cucumber, tomatoes, feta, red onion, olives and parsley in a bowl. Season with salt and pepper. Toss with olive oil and vinegar. Set aside. 2. Preheat a lightly oiled grill 3. Just before grilling, season the steak well on both sides with salt and pepper. Grill until well- seared and well-browned on the first side, about 4 minutes. Turn and grill 3 minutes more for medi- um- rare meat. 4. Remove to a cutting board and let rest 5 minutes for the juices to settle. Carve into gener- ous 1/2 inch slices and divide among 4 dinner plates, topped with the reserved salad. Fish Fries, sponsored by the Knights of Columbus, will be held in the spirit of Lent 5:30-7 p.m. March 5, 19 and 26 in the Parish Hall, 2355 Monroe St. in Red Bluff. Dinners are available for dine in or carry out. Prices are $9.95 for adults, $8.95 for seniors 50 and older and $5.95 for children younger than 9. Courtesy photo There was a Cookie Monster sighting at Bidwell School the afternoon of Feb. 24 He visited the students and then went outside to greet parents and hand out free Otis Spunkmeyer cookies. The event was an part of Bidwell School's Annual Cookie Dough Fundraiser Kick-off. Through March 10, students will be selling Otis Spunkmeyer's cookie dough in 2.7 lb tubs. There are 12 flavors available and all tubs are $15 each. This is Bidwell school's largest fundraiser and proceeds will go to help support the school's many student programs especially in a time when school districts budgets are being slashed.
