SHASTA REGIONAL Communityfoundation awards scholarships The Tehama County Democratic Central Com- mittee is pleased to an- nounce the awarding of three $500 Scholarships to Tehama County 2016 high school graduates. "Selecting the scholar- ship recipients was found to be rewarding to our committee as well. They were so impressed with the spirit and stamina of these fine young people and that many had succeeded while overcoming obstacles," said Judy Turner, chairwoman. The Corning High School selection was An- issa Munoz. The committee found Anissa to have her goal firmly in mind, Crim- inal Justice, in particular the FBI. She earned a 4.0 GPA while participating in school government, sports, church and community ac- tivities. She will be attend- ing Sacramento State. The Los Molinos recipi- ent was Jasael Ruiz, a boy from an immigrant fam- ily who exhibited extraor- dinary effort and talent to bring himself to the top of his high school class. Excel- ling in math and having an interest in technology, his career goal is in Computer Science and he will attend Chico State University. RayAnne Lockett, the Red Bluff High School award recipient, identified herself as a caregiver be- cause that was what was needed in her family and she found she liked it and was good at it. She is a top student and a hard worker. Her sights are set on a nursing career specializ- ing as a Certified Midwife Nurse. She will be attend- ing the University of Ne- vada. This recipe for gin- ger-orange barbecued beef back ribs comes from the California Beef Council's Pacific Ribs brochure. Ingredients 6 pounds well trimmed beef back ribs 2 teaspoons grated lemon rind 1/3 cup fresh lemon juice cup fresh orange juice 1 tablespoon grated fresh ginger 1 tablespoon minced garlic (about 4 cloves) cup hoisin sauce cup honey 1 teaspoon salt 2 tablespoons dark soy sauce Dash of hot chili oil Grated orange and lemon rind for garnish Directions Cut beef between the bones separating into individual ribs. Com- bine the remaining in- gredients; pour into a self-sealing plastic bag and add ribs. Turn bag and massage to coat ribs. Refrigerate over- night. Preheat oven to 425'F. Remove ribs from mar- inade; pour reserved marinade in a sauce- pan. Bring marinade to a boil; reduce heat and simmer to thickness of a glaze (about cup). Place ribs on a rack over a pan of hot water in oven; cook for 30 min- utes, turning them once halfway through the cooking until browned and crisp. Lower heat to 375'F. Brush ribs with mar- inade glaze, roast 10 minutes, turn over, brush again. Roast 10 minutes longer. Garnish with rind. Serve with roasted potatoes and salad. Serves 6 — 2 ribs per serving.
