BETA CHI NEWSLETTER 2 Celebrating Food and Family in Kappa Cheryl Katy Alfrey Waldeck '78 Shares Her Experiences W hen Cheryl "Katy" Alfrey Waldeck '78 came to UK, she was far from everything familiar and looking for a place to call home. When she walked through the doors of 238 E. Maxwell, she knew she had found it. "There wasn't any other choice for me. Kappa gave me something to belong to. My sister, Jane Alfrey Ingram '76, was in the chapter and the other girls were so friendly and so real." Katy found her home away from home in Beta Chi and friendships she would come to cherish the rest of her life. Kappa has remained an important part of her life throughout her time as an alumna. "When I moved to Oklahoma, I joined the Kappa alumnae group and immediately had a place to belong. One of my favorite memories is attending my first alumnae Christmas party in Tulsa." She was thrilled to find that the bond of ΚΚΓ remained strong, no matter where you were or where you were from. That is one of the many reasons she continues to support Beta Chi Chapter. "I believe alumnae support is absolutely crucial to the future of the chapter. It's important for alumnae to be role models for the current members." She encourages her sisters to get involved in their local alumnae chapter and offer their support for Beta Chi. "That is how you maintain the reputation and standards of the chapter." Recently, Katy wrote a cookbook, The Joy of Food: Celebrating the Role Food Plays in Our Lives. It began as a simple project for her sons, but in the process, entire chapters emerged. When she shared chapters with friends and family, they encouraged her to continue her writing and publish her book widely. Heirloom recipes, such as her mother's German pie crust, are included alongside foods she traditionally prepares for her own family and friends. "In my book, there's a story that goes along with each recipe detailing the joy the dish has brought in the sharing and enjoying with others." Many cooking tips like baking light and airy cakes and rolling the perfect pie crust are sprinkled throughout. She also inserts other how-to tips and ways to prepare dishes ahead of time when possible, so you can enjoy the party along with your guests. The Joy of Food is all about the experience of sharing a meal and the art of entertaining. "Giving to others is both transforming and restorative. The act of baking a birthday cake or preparing a dish for someone is more than just providing a meal; it is a way of showing you care." The Joy of Food is available on Amazon.com. Katy and her husband, Todd, have been married 33 years and live in Tulsa, Oklahoma. Katy has worked at Philbrook Museum in Tulsa and the University of Oklahoma, specializing in leadership development and cultural change. She is now a consultant. Her sons, Robby and Michael, live in Colorado and North Carolina, respectively. "The women of Beta Chi made such a difference in my college life and I will always cherish my connection with them." Lora Barrow Tuttle '39 is 95 years old and living in Mountain Brook, Ala. She enjoys spending time with her family and friends. Ruth Gildart Lewis '45 turned 90 years old in October 2015. She enjoyed the celebration with her children and grandchildren in San Diego, Calif. Barbara Rosson Dillingham '47 has three children, five grandchildren, and eight great-grandchildren. She spends much of her time visiting family and friends. Barbara lives in Marietta, Ga. Their most recent travels include Morocco, Peru, Australia, New Zealand, and going on an African safari. They have been married for 57 years and have three children and seven grandchildren. Elizabeth and Rudolph live in Greenwich, Conn. Susan Scott Coughlin '61 is grateful for her KKΓ experiences and the opportunities afforded to her. She and her husband, Joe, will be celebrating their 50th wedding anniversary this year. They live in Kenilworth, Ill. She is also active at Epiphany Catholic Church and takes adult education classes through the Veritas Program at Bellarmine University. They just celebrated their 50th wedding anniversary.
