2A Daily News – Tuesday, August 9, 2011 Community people&events Dance Country, McCloud The Tri-County Sams Chapter of the Good Sam Club held their July Campout at Dance Country RV in McCloud, with six rigs in attendance. On Friday morn- ing five rigs met at the Cozy Diner in Red Bluff for breakfast and then traveled together to McCloud to meet with the other rig that went up on Thursday. On Saturday morning we held our Social Hour with coffee and lots of good breakfast items to enjoy. Satur- day afternoon we held our meeting and in the evening we had a Rib barbeque with more good food. Trail- bosses were Lisa and Richard Sol, who decorated the tables in the 4th of July theme; using red, white and blue tableclothes, napkins, garlands and balloon weights in small popcorn boxes. They also had pop- corn boxes with bags of popcorn and candy and Teenie Beanie Babies on the table. Our Aug. 12-14 Campout will be at the Mt. Lassen/ Shingletown KOA Campground. Trailbosses will be Ed and Retta Pereira of Orland. Anyone owning a self-contained RV that would like to go on monthly campouts with a great small group of people are encouraged to call Wagon Master Vic Dick- ison at 824-3081 or President Richard Sol at 385-1344. KIXE kids design contest KIXE has a new competition for children who like to draw: KIXE Kids Design a Logo Contest. Children can change or add to the logo any way they want. Winning designs will appear on KIXE during the children’s pro- gramming. Beef Crostini with Roasted Red Pepper Whipped Cream Prep Time: 45 min Inactive Prep Time: 2 hours to overnight Cook Time: 30 min Level: Intermediate Serves: 30 to 40 pieces Ingredients 1 baguette, sliced into 1/2-inch rounds (about 30-40 pieces) 4 tablespoons butter, melted 2 tablespoons olive oil 1 1/2 pounds beef tenderloin, trimmed 3-4 tablespoons Clownbrand.com’s Three Ring Circus rub/seasoning blend 1 cup red pepper whipped cream, recipe follows nish 30 small fresh sage leaves, for gar- 3 tablespoons drained capers, chopped Directions Tie the beef with kitchen string to help maintain its shape and thoroughly rub it with the Three Ring Circus sea- soning and let it rest in the fridge for at least 2 hours or overnight. Preheat the oven to 350 degrees F. Remove the beef from fridge and let it come to room temp. Put the tenderloin into the skil- let and brown it on all sides, about one minute per side. Transfer the skillet to the oven and roast the tenderloin until cooked to desired doneness, an instant- read thermometer inserted in the center registers 120 degrees F for rare, about 15 to 20 minutes, a bit longer for medi- um rare. Remove the beef to a cutting board and rest for at least 15 minutes, place the beef in the freezer until it is just firm, not frozen (this will make it easier to slice), about 2-3 hours. While the beef is chilling, lay the baguette slices on a baking sheet. Combine the butter and olive oil in a small bowl, and liberally brush each slice with the butter mixture. Bake in the top half of the oven until slightly golden, about 15 minutes and set aside. Using a large sharp carving knife, slice the tenderloin thinly into about 30 pieces. To assemble the hors d'oeuvre, spoon then spread a small dollop of the whipped cream onto the crostini. Top with a rosette of tenderloin and another dollop of whipped cream. Garnish with a sage leaf. Arrange the crostini on a platter. Scatter over the capers and serve. Red Pepper Whipped Cream: 1/2 cup heavy cream, chilled 1/3 cup roasted red peppers, chopped and mashed into a paste. Pinch salt Pinch white pepper Whisk the heavy cream in a well- chilled medium mixing bowl until the peaks are firm. Gently fold in the red pepper paste, salt and white pepper. Refrigerate until ready to use.
