Chicken Fried Steak and gravy is the key to a man's heart. 6 cube steaks or ten- derized round steak 3/4 cup flour Salt Pepper Seasoned salt 1 cup milk Frying pan with veg- etable shortening for frying Milk for gravy Pour milk into a shal- low dish or plate. Pour flour into another plate; season flour with salt and pepper. Sprinkle seasoned salt on steak. Have cooking oil heated to medium high heat. Dip steaks in milk, then dredge in flour. Push or pound the flour into the steak. Fry on one side until natural juices flow out of the top of the steak. Turn heat down to medi- um; cook until steaks are nice and brown. Gravy: Pour off all but 2 tablespoons oil, leaving the little brown bits in the pan. Turn heat to high and add 6 tablespoons flour. Stir flour around in oil until mixed and starting to brown. Add about 2 cups of milk, and stir briskly, mixing flour and milk. Turn heat to medium low. As gravy starts to thicken, add more milk, about 2 cups. Salt and pepper to taste. Cook until desired thickness is achieved.
