2A – Daily News – Tuesday, February 1, 2011 Community people&events Writer’s Forum meeting Anna Elkins will be the guest speaker at the Writer’s Forum meeting, which will be 10:30 a.m. to 12:30 p.m. on Saturday, Feb. 12 in the Memorial Hall of All Saints Epis- copal Church, 2150 Benton Drive, in Redding. Poet and former poetry editor Anna Elkins will discuss what editors look for in their "in" boxes. She will address the art of revision and effectively readying poetry for the sub- mission process. She will also recommend places to submit poetry, national and international sources for publication, contests, residencies, and other opportunities. Anna Elkins earned a Master of Fine Arts in Creative Writing (Poetry) from the University of North Carolina. She was then "schol- arshipped" to Germany to write poetry as a Fulbright Fellow. In the intervening ten years, she has ghostwritten, edited, and taught writing between the Swiss Alps and Micronesian seas. The public is always welcome to attend. Admission is free. Peace Officers’ meeting Tehama County Peace Officers’ Association will meet on Thursday, Feb. 3, at M&M Ranch House Restaurant for a business meeting to be hosted by the Tehama County Sheriff/Coroner. Non-hosted happy hour will be at 5:30 p.m. will be followed by dinner off the menu at 6:00 PM and meeting at 6:20 p.m. Richard Knox (TCSO) will be honored for services rendered as club president in 2010. Club president Dan White (CDF/CAL FIRE) will be making the presenta- tion and preside at the meeting. This fast-fixing chili is great for a quick weeknight supper or for a tailgate party before the big game. 1 pound lean ground beef 1/4 teaspoon salt 1/4 teaspoon pepper 1 can (15 1/2 ounces) chili beans in chili sauce, undrained 1 can (14 1/2 ounces) chili- style chunky tomatoes, undrained 1 cup frozen corn 2 tablespoons chopped fresh cilantro 1. Brown ground beef in large nonstick skillet over medium heat 8 to 10 minutes or until beef is no longer pink, breaking up into 3/4 inch crumbles. Pour off drippings; season with salt and pepper. 2. Stir in beans, tomatoes, and corn; bring to a boil. Reduce heat, cover and simmer 10 min- utes. Sprinkle with cilantro before serving. Total preparation and cooking time: 25 minutes. He was past ninety years old and was one of the pioneer residents of Tehama county, having resided for many years on a ranch near Newville.
