Bev Ross, Barbara McIv- er and Woolery chose TJ’s Antiques as the win- ner of the beef appetizer competition. Chef Jack Lewis said you need to use a good cut of beef, and he chose Chateaubriand, the most tender cut of beef, also known as a filet. He and the judges were looking for a morsel (little bite), with a good taste. The fla- vor of beef is enhanced by the Umami factor when paired with mushrooms, cheese, horseradish, tomato. A Chateaubriand (filet of beef) cut into cubes, sauted with garlic, green onion and Portabella mushroom. When done, he ‘burned off’ with bur- gundy wine. Jack would prefer to serve this on a tender puff pastry, but time ran out, and he used crackers.
