Instructors will be Concepcion Mendoza, UCCE Nutrition Family and Consumers Science advisor, and Darla Bandsma, UCCE Food and Nutrition educator. Mobile Dental Clinic Arrangements have been made for the Mobile Dental Clinic to be in Los Molinos Aug. 5-16. Northern Valley Indian Health has taken over the complete operations of the clinic. To make an appointment, call 5206913. Northern Valley Indian Health has changed its service delivery on the clinic — it will continue to see children and pregnant women; however, will be charging folks without insurance. This is an important distinction as there was a 5-year contract with NVIH to provide the free service and now the contract has ended and without a new contract that includes funding to serve folks without any form of payment, the MDC must operate just like all the other NVIH clinics. The clinic does have a sliding fee schedule for qualified individuals as does Rolling Hills Clinic and Greenville Rancheria, so that may help. If families cannot afford to do this then the only other resource will be the emergency room or wait for Give Kids a Smile day in February. All 3 clinics will see children as early as their first tooth. Bayanihan Association event The Bayanihan Association of Northern California, a non -profit organization, has scheduled an annual festivity at Our Lady of Mercy Catholic Church Hall on Shasta View Drive in Redding for Aug. 24 The event starts at 5 p.m. and tickets are $10 for adults, $5 for children 5-12 years. Featured will be a Filipino buffet and cultural show after the dinner. Tunisian Meatballs was a National Beef Cook-Off recipe in Volume III Best of Beef. 1 1/2 pounds ground beef (80 percent lean) 1/4 cup milk 3 slices white bread 3/4 cup chunky peanut butter 2 large eggs 2 cloves garlic, minced 1 teaspoon ground cinnamon 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon Hrisa* 1 can (10 3/4 ounces) condensed cream of mushroom soup 1 cup water 2 cups hot cooked rice Parsley sprigs Chopped peanuts 1. Pour milk over bread; squeeze dry. Combine ground beef, bread, peanut butter, eggs, garlic, cinnamon, salt and pepper, mixing lightly but thoroughly. 2. Pinch off 1- inch pieces of beef mixture and shape into meatballs. Place in 2 jelly roll pans. 3. Preparation time: 2 minutes 1 tablespoon ground red pepper 1 1/2 teaspoons ground cumin 1/4 teaspoon salt Combine red pepper, cumin and salt; mix thor- oughly. Store in jar or plastic container with tight-fitting lid in cool place. Yield: About 1 1/2 tablespoons. 5. Combine sour and water in large saucepan; mix well, bring to a boil, stirring frequently. Stir in 1/2 teaspoon Hrisa. 6. Add meatballs, stir- ring gently. Cook until heated through. 7. Serve meatballs with rice. Garnish with parsley and peanuts. 4 servings. Preparation time: 30 minutes. Crafters and artisans whose work is of all shapes, sizes, materials and whimsies are invited to set up shop at the Tehama County Museum's 32nd Annual Jubilee on Saturday, Sept. 7. The large number of tents and sun shades that set up in Habert Park next to the museum are a very important feature of the Jubilee. They always entice locals and visitors alike to stop and enjoy the festivities.
