sweet Potato Fries Prep Time: 10 min Cook Time: 20 min Serves 2-4 ingReDients • 1 large sweet potato • 1 Tbsp olive oil • 1 tsp garlic powder • Pinch of salt • Your favorite seasonings instRuctions 1. Preheat oven to 450°F. 2. Slice sweet potatoes into ¼ inch wide strips,or ¼ inch cubes. Sweet potatoes can be hard to cut. Make sure you have a sharp knife, and ask for help if you need it. 3. Add sweet potatoes to a bowl and drizzle with just enough oil to coat. 4. Sprinkle with salt and your favorite seasonings. 5. Spread out in a single layer on a baking sheet. 6. Bake for 20 minutes,flipping occasionally. 7. Let cool for a few minutes before serving. Try making your own seasoning blend. here is our favorite: 1 pinch each of garlic powder, onion powder, cayenne, pepper and cumin. Orange you Glad smoothie Prep Time: 5 mins Serves: 3 ingReDients • 2 cups frozen peaches or mango • 2 bananas • 2 cups of diced carrots • 1 ½ cup water • ¼ cup orange juice instRuctions 1. Add all ingredients into the blender, frozen ingredients last. 2. Blend ingredients on medium-high speed, adding more water as necessary to get your desired consistency. 3. Serve cold in a glass, or in a bowl topped with granola! Pro Tip: If you don't have a powerful blender, try steaming your carrots for 10 minutes first. Summertime is snacking time! Good news! You can make snacks that are yummy and healthy too! Here are some healthy snacks from our friends at Apple Seeds Teaching Farm in Fayetteville! ingReDients • 1 bunch of kale (about 10 large leaves) • 1 Tbsp olive oil •1/8 tsp salt • Other seasonings to taste (not more than 1 tsp combined) instRuctions 1. Set oven to bake at 400ºF. 2. Remove the stems from the kale. 3. Cut leaves into 2 inch pieces. 4. Place in a large bowl and drizzle with olive oil. 5. Toss the leaves and the oil with your hands. 6. Add salt and seasoning, and toss again. Be careful not to add too much seasoning. 7. Arrange kale on baking sheets in a single layer. If the leaves are overlapping they will be soggy. 8. Bake until crispy and the edges just begin to brown (About 5-10 min). 9. Let cool for a few minutes on baking sheets then transfer to a bowl and serve.
