Whisk constantly until mixture is nearly hot to the touch and sugar has dissolved (mixture should feel free of sugar granules when rubbed between your fingertips). Strain mixture into the bowl of a mixer, fitted with the whisk attachment. Starting on low and gradually increasing to medium-high speed. Whisk until stiff (but not dry) peaks form. Continue mixing for 10 minutes until the mixture is fluffy, glossy and completely cool. With mixer on medium-low speed, add the butter a few tablespoons at a time, mixing well after each addition. Once all butter has been added, whisk in vanilla. Continue beating on low speed about 2 minutes. Mixture may seem curdled at first, but press on until the frosting is completely smooth and silky. Keep buttercream at room temperature if using right away. CV Find the rest of this recipe at www.cityviewnc.com
