This recipe for Beef and Roasted Bell Peppers is from the Lassen Coun- ty CattleWomen "A Taste of Beef, Sip of Wine" beef appetizer cookbook. 1/2 lb. thinly sliced cooked roast beef — if it is not thin then it is hard to roll-up 1/2 cup light cream cheese with roasted garlic from 8 oz tub, softened 1 jar (23 oz) roasted red and yellow bell peppers Spread each slice of beef with cream cheese. Volleyball clinic Sacred Heart Parish School will be hosting a Volleyball Clinic the week of Aug. 2-4 from 9 a.m. to noon. The camp is open to boys and girls entering second through eighth grade. The name of the event is "Harvest Fest" and the theme is Bids, Bites and Brews. It is guaranteed to be a fun evening with food sampling, live music, beer and wine tasting, a silent auction, farm tours and display booths. Proceeds from this event will assist in funding farm lab By ED HAYES (MCT) — Boy, it's hot. Man, it's hot. Whew, what a blister. Surely you've heard one of those iterations lately. Undoubtedly you muttered one, or one comparable yourself. Truthfully, I'm not too hot a student when it comes to barometric pressures, temperatures, wind direc- tion and art of that sort. Weather is relative. That's about the extent of my com- prehension. Before relocating in Florida 40 years ago, some- one warned me that she resided here for a spell and it was really hot in the sum- mer. Really? I think I under- stood, ever so well, that before staking claim, Orlan- do wasn't going to be anoth- er —well, Fargo, let's say. Is somebody trying to sell me on the fact that Ari- zona, Arkansas, Omaha, Pottstown, St. Louis and so on, are not similarly bur- dened with summer swelter zones? The first house I lived in had a nice little attic where my two brothers and I romped, but it also served as our bedroom. Talk about smotheringly hot in August. My big brother called it the Sahara Plaza. One wearisome summer day our parents granted per- mission to haul our bedding down and out on the screened porch. Cooling off on these hot summer days How I'd love to relive that night, talking and laughing with my brothers, until Dad said OK, that was enough, boys. "Night, Dad, Mom." And off to dream world we dithered, our wavering eyesight guiding the way through the apple tree alongside the porch, and up to the brocade of stars in the midnight blue. If there was a loose breeze in the world that night, we caught it. Those St. Louis sum- mers must've been an abomination for our Irish papa. Born in County Clare on the banks of the Shan- non, he wasn't a far paddle from Dublin, and if you stay up with the daily weather reports in the paper, you know that Dublin isn't exactly a sunny oasis. One jolly July eve after the war, Dad, home from work, found all windows and shades in our upstairs flat yanked down to about an inch or so from the sills. Mom and the landlady downstairs had worked out this plan to keep the heat out, and by also leaving cer- tain doors ajar, create a draft. Well, Dad had his own scheme to beat the heat. Up went the shades and win- dows. Doors flung open. He stormed to the balcony back porch, and there, in his undershirt, he sat and watched the cooling evening approach, an icy cold lager in his hand.
