The eating of the greens By MILLIE ZINK During the St. Patrick's Day holiday weekend you hear a lot of talk about the wearing of the Green. Myself, I'd rather eat them. Right about now you should be looking at rows of greens coming up in your veggie garden. Such as mustard greens, turnip greens, beet greens and even collard greens, which are not my favorite. However, they're ok if you cut them when they're very small and tender. It is endlessly interesting to find out how different cooks do their greens. All the way from steaming them and serving with salt and pepper, butter and malt vinegar to soaking in salt water to get rid of any bugs that might be lurking, then boiling them for an hour with onions and bacon. Along this same line of thinking they can be cooked up with a ham bone which has a nice amount of ham on it. What a variety! I tend to go with tearing them up in bite size pieces and cooking them in the microwave with salt and pepper and chicken broth. I've found this to be a terrifically flavorful way for a number of veggies such as Brussels sprouts, broccoli and various types of greens. Spinach is always good but in my garden it usually wants to bolt around June. The only one that doesn't is what they call New Zealand spinach, which is a little different. That is one mess of greens I like to sprinkle with malt vinegar, salt and pepper and butter. With all this butter I'm beginning to sound like one of the chefs on the food channel. Spinach is soooo useful – it can be used in salads that range from spinach salad with grilled shrimp to spinach salad with rhubarb dressing to a more unusual DAILY NEWS TEHAMA COUNTY THE VOICE OF TEHAMA COUNTY SINCE 1885 VOLUME 127, NUMBER 61 HOW TO REACH US On the Web: www.redbluffdailynews.com MAIN OFFICE: NEWS Monday-Friday, 9 a.m. - 5 p.m. News Tip Hotline: 527-2153 FAX: (530) 527-9251 E-mail: clerk@redbluffdailynews.com Daytime: (530) 527-2151 Sports: Ext. 109 Obituaries: Ext. 101 Tours: Ext. 112 After hours: (530) 527-2153 ______________________ ADVERTISING Main Phone (530) 527-2151 Outside area 800-479-6397 545 Diamond Ave. Red Bluff, CA 96080 ______________________ Mail: Red Bluff Daily News P.O. You can also go to many main dishes with this green, including a spinach meat roll, a spinach pasta salad and the all-time favorite, spinach dip. I'm not sure if it can be called a green or not, but asparagus right now is fresh and common in the produce aisles. There are so many ways to cook it, it boggles the mind. I ended up doing it with salt and pepper, butter, in chicken broth. That's my favorite method at the moment. I'm just now in the process of divesting myself of something like 200 cookbooks. As you may guess, I really enjoy reading them and trying new recipes. These days they all have a story to tell. A golf class is being offered at Oak Creek Golf Course in Red Bluff starting June 18. River Park band concerts The time has arrived for the Red Bluff Community Band to begin the summer "Concert Series" in the Red Bluff River Park. Lake Red Bluff is gone but the grass is still green and the trees offer their shade to those who venture to the park to absorb some of the fine esthetics that 90 years ago... Fire Razes Business Houses On East Side Of Main Street Today Fire this forenoon did thousands of dollars in damage to Red Bluff business property on the east side of Main street between Pine and Oak streets. As a result the one story building occupied on the north side by Harry B. Wiese who conducted a restaurant and soft drink house, was completely destroyed; the Allen and Allen plumbing shop in the structure just north of this was badly gutted... — June 6, 1923 our park has to offer. For those who like to have a little time to sit back, relax and appreciate the park's beauty, they will be treated to an old fashioned band concert while relaxing and visiting with friends and neighbors from 8-9 p.m. on Monday evenings, June through August. The band plays a large variety of music, such as that from the broadway stage and the silver screen to dixieland greats, military marches, light classics, old standards and patriotic numbers. There should be a little something for most everyone in the band's weekly programs. The band is made up of people from most all walks of life. Red Bluff folks make up the core but not enough locals to fill all of the positions on the musical team so an effort is made to reach out to try and fill the vacancies. Last year a musician came up every week from San Francisco to play with the band and another drove up from Sacramento. The band has several regulars that drive an hour and a half one way to play every week from the Weaverville Community Band which is very helpful in filling position vacancies. There are also several regulars that drive down from Redding all year long to be a part of the Red Bluff Band. It appears that the band has something to offer, but the need for more musicians still remains. There is no audition. All one has to do is show up and be willing to work at learning the music. The band has had members from middle school through the age of the middle nineties. Pianists and vocalists who read music can find a place in the band by being participating in the percussion section. There is a need for four to six percussionists and Red Bluff has only one with another that is joining for the summer, but a shortage of percussionist remains along with clarinets and trumpets. All wind and percussion musicians are welcome to join the band with the percussion, clarinet and trumpet sections being most in need. More information available from Conductor Jay Thiel at 5273486.
