What is the best angle for the knife when using a sharpening steel? A. 20 degrees. To figure that, hold the knife at a 90-degree angle, cut that in half to imagine a 45-degree angle, and then in half again to imagine just a touch over 20. (I don't think the 2.5-degree overage will hurt your knife one bit.) Asian knives need 15 degrees — a little harder to estimate. — Joe Yonan Q. How can I dress up orzo? I was planning on serving it next to roasted broccoli for dinner. A. Is it best to just use it in place of the dried ground stuff? Or is there something else the fresh root does best? A. I find that fresh turmeric has a little tangy sweetness that dried turmeric does not. And it's certainly supposed to be good for you. You can prep it as you would fresh ginger — peeled, minced or in thin matchsticks — and eat it raw or in a stir-fry or curry. You can wrap it in paper towels and stash it in a plastic bag in the refrigerator for at least a few weeks. Turmeric ace Monica Bhide says you should be advised: It stains! She uses the fresh stuff grated, in marinades and salad dressings; stirred into scrambled eggs (that sounds pretty), in stir-fried rice and in smoothies. She says it's the "difference that makes the difference" in her homemade spice broths. — Bonnie S. Benwick Q. Ever since Joe Yonan opened my eyes to grilled cabbage, I've been grilling all sorts of things. Last night I tried bok choy to go with my asparagus and salmon. The tops of the bok choy were beautifully wilted, and some had a lovely crisp, but the bottoms were tougher. Anything I can do to soften them up before grilling? A. So glad you like the grilled cabbage! It's become one of my staples during grilling season. On the bok choy, I think the key is probably in how you cut it. Did you use a grill basket? If you have one, then I'd be tempted to cut the tougher bottoms into smaller pieces and leave the tops whole. — J.Y. Q. I have about 2 1/2 pounds of chicken thighs to cook for dinner. They are the kind with skin and bones, and I want the skin to get nicely browned. I was considering cooking them in my pressure cooker but wasn't sure how I could do so and still get the skin brown. Perhaps pan-frying them first in a bit of olive oil? Or would you recommend skipping the pressure cooker altogether and just roasting them? A. Even the folks at America's Test Kitchen, in their new "Pressure Cooker Perfection," say they start by browning skin-on thighs for the pressure cooker (to develop flavor) and then discard the skin because it would get flabby — and add grease — to the finished dish. That said, I'd use those thighs in Lemonand-Honey-Flavored Chicken. It's in our Recipe Finder at www.washingtonpost.com/recipes. — B.S.B. Q. Is there any reason why oil should be added to pasta cooking water? I add only salt and had thought that oil was unnecessary, but my boyfriend disagrees. A. Alton Brown, a man whose authority in the kitchen is beyond reproach, says not to use oil in your water. It prevents the sauce from clinging to the pasta. — Tim Carman Q. Actually, it's too late because I've already done this, but is there any reason this wasn't a good idea? I put the remains of a beer-can chicken, plus aromatics, on the stove and just before it came to a boil, I realized it would be past midnight by the time it was done and cooled. So I let it come to a boil, quickly cooled it and refrigerated it. Tomorrow morning I'll cook it. It'll be fine, right? A. Yep, it'll be fine. — B.S.B. Q. I have an eight-pound beef round tip that I need a good recipe for. I don't know anything about this cut. Is it tender, good for stews, grilling or roasting? Please help! I love to cook and am not afraid to try complicated recipes. A. At eight pounds, it sounds like you have a beef round tip roast, rather than a steak. So I'd suggest braising or oven-roasting the cut, since it doesn't have much fat in the meat. Those methods will prevent the beef from drying out. I recommend the basic recipe for Slow-Roasted Beef in our Recipe Finder (though it calls only for a four-to-six-pound cut, so you might need more time to cook the meat). But, frankly, eating a braised hunk of beef doesn't sound very appealing at this time of year, does it? You could use your roast (or part of it, at least) for our more delectable Beef and Cabbage Stir-Fry With Peanut Sauce. You'll probably want to freeze the meat first to help cut it into thin slices for the stir-fry. — T.C. Q. I have a few pieces of partially carved roast chicken in the fridge. I've never been a fan of cold meat, but I also can't stand the dry, overcooked chicken that results from reheating. Suggestions? A. Here's one: Shred the chicken with your fingers. Heat a little olive oil in a nonstick skillet and saute some minced shallot. Add a few tablespoons of tomato paste and let it cook/caramelize for about three minutes, then stir in the shredded chicken, some chicken broth and tarragon vinegar (to taste). Cook to blend the flavors, and finish with a sprinkling of fresh chopped tarragon. Serve over pasta or alongside steamed broccoli rabe. Amazon makes push into grocery business SAN FRANCISCO — Amazon.com Inc is planning a major roll-out of an online grocery business that it has been quietly developing for years, targeting one of the largest retail sectors yet to be upended by e-commerce, according to two people familiar with the situation. The company has been testing AmazonFresh in its hometown of Seattle for at least five years, delivering fresh produce such as eggs, strawberries and meat with its own fleet of trucks. If those new locations go well, the company may launch AmazonFresh in 20 other urban areas in 2014, including some outside the United States, said one of the people. An Amazon spokeswoman did not respond to a request for comment on Tuesday. Amazon is searching for new, large markets to enter as the company tries to maintain a growth rate that has fueled a 220 percent surge in its shares over the past five years. The grocery business in the United States, which generated $568 billion in retail sales last year, may be a ripe target. Amazon's expansion plans are a potential threat to grocery chains such as Kroger Co, Safeway Inc and Whole Foods Market, as well as general-merchandise retailers Wal-Mart Stores Inc and Target Corp, which also sell a lot of groceries. "Amazon has been testing this for years and now it's time for them to harvest what they've learned by expanding outside Seattle," said Bishop, chief architect at Brick Meets Click, a consulting firm focused on retail technology. Turkey burgers really can be juicy and flavorful By Sara Moulton Associated Press Summertime is burger time. And it's so easy to throw a few beef patties on the grill. Not much is required in the way of embellishment, yet they have a big happiness return. What's the magic ingredient? Fat, of course. Beef burgers are high in fat, which guarantees flavor and juiciness. And because fat enhances flavor, it also makes anything else you put in or on the burger taste better, too. Heartbreakingly, as you decrease the fat content in a burger, its flavor tends to go bye-bye, too. This is a real problem if you want to dig into a delicious burger and still want the blood to continue sailing through your arteries. The solution? Turkey. I know. I know. You've tried turkey burgers and it was like eating wet cardboard. Hah! But you haven't tried my turkey burgers... GREEK-STYLE TURKEY BURGERS WITH PEPPERONCINI SAUCE Start to finish: 45 minutes; Servings: 4 1 1/2 tablespoons extra-virgin olive oil, divided 1/2 cup finely chopped yellow onion 5 ounces baby spinach Kosher salt and ground black pepper 1/4 cup nonfat plain Greek yogurt 1/4 cup low-fat mayonnaise 2 tablespoons minced seeded pepperoncini 1 tablespoon liquid from the pepperoncini jar 1 to 2 teaspoons lemon juice, or to taste 1 teaspoon minced garlic 3 ounces crumbled feta cheese 2 tablespoons chopped fresh oregano 1 pound ground turkey 4 whole-wheat hamburger buns Heat the grill to medium. In a large skillet over medium-high, heat 1 tablespoon of the oil. Add the onion and cook, stirring occasionally, until golden brown, about 5 minutes. Add the remaining 1/2 tablespoon of olive oil and the spinach and cook, stirring, until the spinach is wilted. Season with salt and pepper, then transfer the mixture to a bowl. Chill in the refrigerator until cooled to room temperature. Meanwhile, in a small bowl combine the yogurt, mayonnaise, pepperoncini, pepperoncini liquid, lemon juice, garlic, and salt and pepper to taste. Set aside. Once the spinach has cooled, remove it from the refrigerator and add the feta, oregano, ground turkey, 1/4 teaspoon salt and ground black pepper. Mix well, then shape into 4 patties, each about 1/2-inch thick. Spray the burgers lightly with olive oil cooking spray, then grill over medium heat until just cooked through, about 6 minutes per side. Spread some of the yogurt sauce on the bottom half of each bun, then top with a burger. Spoon the remaining sauce over the burgers and top with the remaining bun hales. Serve immediately. Nutrition information per serving: 460 calories; 220 calories from fat (48 percent of total calories); 24 g fat (7 g saturated; 0 g trans fats); 110 mg cholesterol; 34 g carbohydrate; 5 g fiber; 6 g sugar; 29 g protein; 1030 mg sodium. Sara Moulton was executive chef at Gourmet magazine for nearly 25 years, and spent a decade hosting several Food Network shows. She currently stars in public television's "Sara's Weeknight Meals" and has written three cookbooks, including "Sara Moulton's Everyday Family Dinners." "The fear is that grocery is a loss leader and Amazon will make a profit on sales of other products ordered online at the same time," he said. "That's an awesomely scary prospect for the grocery business." Kroger, Whole Foods, Supervalu and Safeway did not respond to requests for comment on Tuesday. Target declined to comment. A successful foray into groceries could also help underwrite the development of a broad-based delivery service employing Amazon trucks to deliver directly to homes, which could have implications for UPS, FedEx and other package delivery companies that currently ship Amazon goods.
