It is a fitting tagline for the only brand of Mexican whisky made from 100% ancestral corn, a staple crop that dates back over 10,000 years to Mexico. Abasolo celebrates corn's culinary and cultural importance to the country through its sourcing and production methods. It starts at the Destilería y Bodega Abasolo—Mexico's first dedicated whisky distillery—with 100% non-GMO cacahuazintle, an heirloom variety passed down by generations of local farmers, which is then nixtamalized, or treated with quicklime, hulled, cooked, and ground into flour. Nixtamalization is traditionally the first step in preparing tortillas or esquites, but it has never before been used in spirits production; the team at Abasolo mixes the flour with a small percentage of malted corn and hot water to begin fermentation, a process followed by double distillation in a copper-pot still and oak aging in an open-air facility. The result is a rich yet nuanced whisky with notes of honey, vanilla, leather, black tea—and, yes, roasted maíz. With a flavor profile unique to the whisky category, Abasolo is a smooth-as-cornsilk sipper that also has fascinating potential for mixology. It works as well in a highball with Topo Chico as it does in a spirit-forward Old Fashioned or Boulevardier. The soul of the earth is also the flavor of the future.
