july 19-25, 2020 What's up! 47 If sunshine were a fruit, it would be a peach Just peachy try theserecipes Spicy Peach Coleslaw Ingredients Dressing: • ¼ cup mayonnaise • 1 ½ teaspoons Dijon mustard • 1 tablespoon Asian chile pepper sauce (such as sambal oelek) • ½ lemon, juiced • 2 tablespoons rice vinegar • 1 tablespoon vegetable oil • ½ teaspoon white sugar • salt to taste • 1 pinch cayenne pepper, or to taste Coleslaw: • ½ (2 pound) cabbage - quartered and thinly sliced • 2 fresh peaches, pitted and chopped • 1 tablespoon thinly sliced fresh chives • 1 teaspoon thinly sliced fresh chives for garnish (optional) Directions 1. Whisk mayonnaise, Dijon mustard, Asian chile sauce, lemon juice, rice vinegar, vegetable oil, and sugar in a bowl until dressing is smooth. Season with salt and cayenne pepper. 2. Place cabbage into a large bowl; add peaches and 1 tablespoon chives. Lightly toss until combined. Pour dressing over coleslaw and stir until coated. 3. Cover coleslaw with plastic wrap and chill until flavors have developed and cabbage is slightly softened, about 30 minutes. Adjust seasoning, mix again, and sprinkle with 1 teaspoon chives before serving. Summer Peach, Basil & Cheddar Muffins Ingredients • 4 fresh peaches, cut into 1/2-inch pieces • 4 teaspoons finely minced fresh basil • 1 tablespoon brown sugar • 1 ½ cups all-purpose flour • 1 ½ teaspoons baking powder • ½ teaspoon baking soda • ½ teaspoon salt • 1 cup shredded extra-sharp Cheddar cheese • ½ cup butter, room temperature • 7 tablespoons brown sugar • 2 eggs, room temperature • ¼ cup shredded extra-sharp Cheddar cheese Directions 1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper liners. 2. Mix peaches, basil, and 1 tablespoon brown sugar in a bowl; let sit until sugar dissolves, about 15 minutes. 3. Sift flour, baking powder, baking soda, and salt together in a large bowl. Mix 1 cup Cheddar cheese into flour mixture. 4. Beat butter and 7 tablespoons brown sugar in a bowl with an electric mixer until smooth and creamy. Add eggs, one at a time, until just combined; gently fold in peaches. Mix flour mixture, a little at time, into peach mixture until batter is just combined. 5. Spoon batter into the prepared muffin cups. Sprinkle 1/4 cup Cheddar cheese over batter. 6. Bake in the preheated oven until a toothpick inserted in the middle of a muffin comes out clean, about 25 minutes. Fresh Southern Peach Cobbler Ingredients • 8 fresh peaches - peeled, pitted and sliced into thin wedges • ¼ cup white sugar • ¼ cup brown sugar • ¼ teaspoon ground cinnamon • 1/8 teaspoon ground nutmeg • 1 teaspoon fresh lemon juice • 2 teaspoons cornstarch • 1 cup all-purpose flour • ¼ cup white sugar • ¼ cup brown sugar • 1 teaspoon baking powder • ½ teaspoon salt • 6 tablespoons unsalted butter, chilled and cut into small pieces • ¼ cup boiling water MIX TOGETHER: • 3 tablespoons white sugar • 1 teaspoon ground cinnamon Directions 1. Preheat oven to 425 degrees F (220 degrees C). 2. In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes. 3. Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined. 4. Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes.
