16 | October 2019 Kevin Dearing, a military contractor, spotted the winery one day and stopped in. He liked the wine - and the friendly atmosphere. So he and a friend also signed up for the September winemaking class. Dearing said he'd tried making wine on his own the previous year, using pears from a neighbor's tree and instructions gleaned from the internet. Asked how it turned out, he smiled and said, "It had alcohol in it!" at, apparently, was its only redeeming quality. Dearing had much higher hopes for the batch of Riesling he and Kathy De La Garza were mixing up during the class at Rockfish Creek. Aer the class, he said, "I learned what I did wrong before – pretty much everything!" e Rullis lead the classes, which last an hour or so and during which the participants mix together the wine they've selected to make. ey then leave their batches behind to ferment for about a month. During that time, the Rullis and their staff siphon the wine twice into different containers to remove sediment (the process is called racking) and help clarify the wine. e fermenting wine is also stored at consistent and appropriate temperatures, one of the necessities for a good batch of wine. Dearing said that's one of the mistakes he made with his first batch of wine; he let it ferment in his garage where the temperature seesawed over a wide range. Seven wines were made at the September class. Steve Rulli said that's about as large as they want the classes to be for reasons of space.
