PECAN SUPER SNACK Ingredients: • 1 egg white • 1 tablespoon water • 1 pound pecans • 3/4 cup white sugar • 1 teaspoon ground cinnamon • 1 teaspoon salt Directions: Preheat oven to 250 degrees F (120 degrees C). In a large bowl, beat egg white with water until frothy. Stir in pecans and mix to coat. Combine sugar, cinnamon and salt and stir into pecan mixture. Spread on a baking sheet. Bake in preheated oven 1 hour, stirring every 15 minutes. Store in an airtight container. FROZEN GRAPE BITES Ingredients: • Cooking spray • 1 1/2 cups heavy whipping cream • 24 green grapes, frozen Directions: Spray 24 miniature muffin cups with cooking spray. Pour 1 tablespoon cream into each muffin cup. Place 1 grape into each muffin cup, swirling grape in the cream to coat. Freeze grape mixture until solid, about 1 hour. NOTE: If you would like a crust, crush 6 graham crackers and mix with 2 tablespoons melted butter. Spray cups with cooking spray and pack graham cracker mixture into each cup. Then bake at 350 degrees F (175 degrees C) for 5 to 10 minutes. Then do as listed with grapes and whipped cream. CHOCOLATE PUDDING POPSICLES Ingredients: • 3/4 cup milk chocolate chips • 1/2 cup milk • 3 tablespoons unsweetened cocoa powder • 1 tablespoon white sugar • 1/2 teaspoon ground cinnamon • 1/2 teaspoon vanilla extract • 1 avocado • 1 banana Directions: Combine chocolate chips, milk, cocoa powder, sugar, cinnamon, and vanilla extract in a saucepan over low heat; stir until all ingredients are melted and combined, about 5 minutes. Place avocado and banana in blender; blend until smooth. Add chocolate mixture into the puree; blend until the mixture is the consistency of pudding, about 5 minutes.
