Eggs.They'renutritious, delicious and cheap! Cook- ing them properly is quite simple pro- vided you know the se- crets. A per- fectly boiled egg has a yolk that is set all the way to the center and has a beautiful, clean yellow color and no hint of ugly green where the yolk and white meet. A perfectly boiled egg smoothly separates from the cracked shell. Here are the secrets. PRICK THE SHELL. Use a pushpin or nee- dle to push right into the large end of the uncooked egg and into the egg it- self — about -inch deep. This will pierce the tiny air bubble that's present in every egg and allow the air to escape. Without the prick, the egg will expand as it is heated and crack the shell. SIMMER METHOD. Because this is a tedious process, a maximum of 12 eggs should be boiled at one time. Bring a pot of water to a boil. Lower the prepared eggs into the boiling water, bring the water back to a sim- mer, and set the timer — 12 minutes for large, chilled eggs and 13 min- utes for extra-large eggs. Keep the water at a low simmer (where small bubbles are produced and the eggs move only slightly). CODDLE METHOD. Some great cooks pre- fer to coddle eggs rather than simmer because the results are more reliable. Place the chilled eggs in a pot of cold water (6 to 7 cups for 1 to 4 eggs; add an additional cup for each additional egg). Bring the water to a full boil, remove from heat, and cover the pot. Set the time for ex- actly 17 minutes (or 18 for jumbo or extra-large eggs). FOOLPROOF PEEL- ING FOR HARD-COOKED EGGS. Tap the egg gen- tly so as to break the shell in many places around the egg. Place the egg under a light stream of cold wa- ter and begin removing the shell from the bottom (wider) side. If the shell is resistant and wants to take part of the white with it, simply drop three eggs at a time into boiling wa- ter, wait 10 seconds and immediately transfer them to ice water. This will ex- pand and contract the shell quickly and release the shell easily. No more ugly green ring. This change of color occurs when eggs are al- lowed to remain warm after proper cooking. A chemical reaction between the yolk and the white oc- curs, causing the discolor- ation. The way to prevent this is to chill the eggs as quickly as possible. Once the eggs have cooked, quickly pour out the hot water, dump a tray of ice into the pan and quickly fill it with cold water so the eggs are completely covered. Store cooked eggs prop- erly. Cooked eggs should be submerged in cold wa- ter in an uncovered con- tainer and stored in the re- frigerator. They will keep for several days this way, without losing flavor, nu- trition or texture. The fee waiver will not apply to campsites at Lake Pillsbury that are oper- ated under concessionaire through PG&E. "We are pleased to offer this fee free day in honor of veterans and invite folks to take this opportunity to get outdoors and explore the Mendocino," said Ann Carlson, forest supervisor. It was the 2007 hit "Mo- ments" that pushed Emer- son Drive over the top in country music. The pow- erful song validated the talent and passion of the band's drive to succeed in the business its members know and love. "Looking back 10 years ago and seeing where our career first started with 'I Should Be Sleeping' and knowing that there was a movement going around us as a new act on the scene … I just remember how exciting and crazy it was, all at the same time," said lead vocalist and founding member Brad Mates.
