For domestic sparklers higher up the price scale, Sbrocco likes to serve Do- maine Carneros Cuvée de la Pompadour Brut Rosé or Oregon's RMS from sparkling star, Rollin Soles. And she never forgets the Champagne. "The Alfred Gratien Brut Rosé is glorious, and I love the Nicolas Feuillatte Brut," she says. While this may sound like a fancy affair, Sbrocco's favorite party pairing for spar- kling wines is decidedly casual. "I like to do a popcorn bar," she says. "I put out a huge bowl of popcorn and a bunch of different toppings, so people can mix their own combinations." Toppings usually include Meyer lemon oil, finely grated Parmigiano-Reggiano, truffle sea salt and hot pepper flakes. "It's really fun party food, and goes great with bubbles." When serving wine at holiday gather- ings, Sbrocco has only a few rules: make sure the white wines have plenty of time to chill in the refrigerator before guests ar- rive; have at least half a bottle of wine on hand per person; and don't stress about stemware. "Don't be afraid of mismatched glasses, just put them all out," she says. And most importantly, "Don't cheap out on bubbles, ever. Allow yourself a little splurge."
