Recipe for Delicate Wild
Spring Greens with Mache,
Violets and Champagne
Here is a fun idea for a spring event to
truly celebrate salad. The champagne will
effervesce in your mouth as if the leaves have
been bathed in magic! Don't feel limited
to this list of greens.. Add whatever wild
or cultivated greens and edible flowers are
growing in your garden. - Olivia Rathbone
Serves 4 to 6
¾ pound washed mixed greens including:
-Miner's lettuce
-Chickweed tips
-Crisp butter lettuce
-Mache rosettes
2 T chervil tips
¼ C champagne
2 T violets or small rose petals
Extra virgin olive oil
Salt and pepper to taste
