Mix margarine and grated cheese (save some for top.) Mix eggs, milk, soup and add to the macaroni. Spray crockpot with Pam spray. Pour mixture into pot. Add rest of cheese. - Louise Myers, in memory of Rex Myers Thanksgiving is just two weeks away, and while the turkey takes center stage, it's important not to forget the supporting players - the side dishes! This week's recipes come from "Just What the Doctor Ordered," produced by Rutherford Internal Medicine Associates. Copies of the cookbook are available for $10 each at the physician's office, and proceeds are donated to the American Cancer Society's Relay for Life. Crockpot Macaroni & Cheese 4-5 pounds of potatoes (about 12 medium potatoes) 1 (8 ounce) package softened cream cheese 1 cup of sour cream 2 teaspoons salt 1/8 teaspoon pepper 1 crushed garlic clove 1/3 cup green onion tops Cook potatoes and drain. Mash thoroughly. Add cream cheese and sour cream, salt, pepper and garlic. If too thick, add a little milk. Beat until smooth, then fold in onion tops. Spoon into a greased casserole and sprinkle on top 1/2 teaspoon of parka and 1/2 stick of butter or margarine, cut into pieces. Bake uncovered at 350 degrees for 30 minutes or until lightly browned. (This recipe can be frozen; if freezing, thaw before bak- ing and check temperature throughout baking.) Mashed Potato Casserole 3 tablespoons butter 1/2 cup broken spaghetti noodle pieces 1 cup uncooked white rice 2 cups chicken or beef stock Handful of slivered almonds (optional) Put butter, spaghetti pieces and almonds in small saucepan on the stovetop. Heat on medium, stirring constantly to keep them from sticking. Heat until butter is melted and the spaghetti noodles just begin to turn golden brown. (Keep an eye on it; it will turn quickly!) Add the rice and stir around to coat with butter mixture. Add stock and stir. Raise heat to high and bring to a boil. Cover with lid and reduce heat to low.
