These are some holiday specials and I’m using my “Cooking With Sunshine, Volume II” cookbook from Sunshine Elementary School. I believe I’ll be tak- ing these pies to church this Sunday. I’ll give one to the preacher and put the others out for our after services feast! Come on now, let’s get started. Here is a yummy -do recipe for STRAWBERRY CREAM PIE. It’s a recipe from CHERYL WHITESIDE. 1 can sweetened con- densed milk juice of 1 lemon (fresh is best) 2 cups strawberries (if fresh add some sugar - not too much) 1 small carton Cool Whip Graham cracker pie crust Here we go! Simple and it’s a no bake. Beat 1 can sweetened condensed milk and the lemon juice. Add the strawberries. Fold in the Cool Whip. Spoon into the graham cracker crust. Chill for 2 to 3 hours. This pie is really good frozen! (I once served this with frozen slices and drizzled chocolate syrup on top). Now I’m going to thank DEANNA PEELER for her CHOCOLATE MOUSSE PIE recipe. This also is a no bake pie. Easy, tasty, and the “make me another type pie”. With the holidays com- ing up, just think, you don’t have to turn on the oven to be popular. You can also make these first two reci- pes and freeze them to get ahead for the holidays. 1 7-ounce chocolate candy bar with almonds (I think without almonds is much better) 1 1/2 cups miniature marshmallows 1/2 cup milk 2 cups whipping cream - whipped 1 pastry shell baked, or 9 inch graham cracker crust (Tip: I used the chocolate pie crust) Place the candy bar, marshmallows and milk in a heavy saucepan; cook over low heat, stirring con- stantly until the chocolate is melted and the mixture is smooth. Cool. Fold in the whipping cream; pour into crust. Refrigerate for a least 3 hours. I’m now going to turn my oven on and make an all time favorite. Sweet potato pie is popular. However, this recipe is more delicate and the one my family likes best. SWEET POTATO CUSTARD PIE from VIOLA HARRISON is just great! You must try this great pie. 1 1/2 cups mashed sweet potatoes 1 cup sugar 1/2 stick margarine 1 tablespoon cornstarch 1 small can evaporated milk 1 teaspoon vanilla 1 teaspoon lemon 1 egg Combine all ingredients. Use electric mixer and beat until light and fluffy. Pour into unbaked pie shell and bake at 325º to 350º until firm. A delicate treat with all the memories of those wonderful sweet potatoes. There you go - get ready for the holidays and include all three of these pies to go with your pumpkin pie. You’ll be glad you did! During the holidays and throughout the year, remember to “get in the kitchen and show the love!” I’ll be cooking at ya again next week.
